11/29/25 AM NOTES

 Started off quiet for European Breakfast, and picked up soon after Anna arrived at 7:30. Sydney arrived at 8:30 and we had a good rhythm going with the two servers on, and Amanda on the host stand (she did amazing, and is typically at the Condor) pacing the tables was great. 

I reached out to Peter earlier in the morning to see if he could break and stay longer, since I could see that I would be down to 1 server by 2:30. He agreed and it was good to have an extra hands on the floor. Amanda also agreed, and broke as well so she could stay until 4. 

I know we need to put out times on the schedule, but the 5 hour out times, if the server is not aware that they be needed longer is also difficult, because I run into people telling me they can't stay, or they have plans already. If we could at least schedule them for the full 6, it could be better??

We had a large party of 14, preset menu that went really well, and they were out by 2:45, it was a really smooth service, and the food came out in a timely manner. Sydney waited on them, and they arrived at 1 pm. 

Brandon had a few large room service orders especially for Laura Dern, he seemed to have stress, and struggle with them, and I had Ruben support him. It all worked out, but I believe we could have sent things out in a timely manner. 

Brandon has been more increasingly frustrated and annoyed with SOP's, and people not following suit, I worry he may give notice or something, although he says all the time he loves his job. There are issues with dishpit etiquette, people possibly not polishing correctly, also knowing what needs to be polished, which includes collins glasses. Hopefully we can all get on the same page. 

That being said, the Room Service key is missing, and I mentioned it to Sean, he said there used to be a protocol with checking the key out, since I have been there, I have not seen that protocol. Hopefully, we can find the key, I will reach out to the IRD servers that have worked in the past week to see if they have it. Sean said if the key is missing it will be really expensive to change all the locks, and get new keys for everyone, so that is not the case.

So, I spoke to Riley first, and then Shelby they both informed me that Peter was saying that I was picking on him all day, and he was thinking about going to HR. I will say for sure the only thing I said to Peter was about his job performance. A few examples are mentioning bussing more frequently, and staying on top of it, not sitting at the actual bar, showing him some dish pit etiquette, and putting items in correctly on the glass racks etc. I needed to ask him to sweep, help set up the group of 14, take a lap around the pool, specifically busser duties. I also put him on a 30 minute break so he stayed longer, he informed me needed to have more bathroom breaks due to his kidney issues, and needed to take another 10 because his knee was hurting as well. I was always understanding, and gave him the breaks he needed. Amanda and Anna can both vouch that they were having trouble with Peter's performance today.
