11/30/25 AM SHIFT NOTES

 41 guests at European Breakfast, they trickled in most of the morning, then we got a pretty big hit at 9:45 with Lauren Dern, and a lot of her other guests that stayed at the hotel. They were at different tables, her table had 8, but she was moving around chatting with other guests. We kept up the breakfast station until 10:20 or so. 

We had some food issues today, one was plastic in some over hard / omelette eggs, which we replaced, although the guest was on the fence about having them remake it. She seemed fine with her replacement, and was super excited that Laura Dern was sitting across the way from her. She told me she's been in Big Little Lies, and Jurassic Park, it was cute to see how excited she was, but also distracted her about the original problem. I let Chef Robert know about the situation, the plastic was the edge of a deli cup. 

At lunch we had an overcooked burger, and I asked the guest if they would like it redone, and she said no I just don't want to pay for it. She was opening the bun and showing me the burger that she said was burnt, it was definitely overcooked. I took care of the burger, and her tea, since she didn't get a chance to eat lunch, when Paco dropped off the bill, they table mentioned that her guest also disliked their salad. I approached them and said I didn't realize, since it wasn't mentioned. I also decided to take just take care of that meal, and drink since she also didn't get to have lunch. They ultimately left understanding, and said that they want us to succeed, but that we need a better Chef. 

Right after the interaction with the disappointed guests, Sydney approached me to say that table 208 was upset how long their food was taking. I checked in with the kitchen and it had been 30 minutes at that point, but it was the ticket that they were working on. As I was approaching the table to let them know the status, and apologize, I was approached in the hallway by the guest, she said they've been waiting an hour, and they need to leave, and if they thought it would take this long they could have gone to Rori's. I let her know that their food was coming out next, and I hoped they could stay. They stayed and the food came out another 13 minutes later, so 43 minutes on that ticket. I talked to Octavio about the table at the 30 minute period, mostly because I was dealing with the first guest that wasn't happy with their food. But we discussed that if any table is waiting longer than 15 minutes to come get him, as it's difficult to recover quickly when were already at 30 minutes. So, I let the staff know to also let me know if anything is taking more than 15 minutes, to come get a manager. This guest in particular loved their food, and ultimately left happy, we took care of two appetizers. 

Jess sent out notes on Peter Kelley, which was a big issue today, I felt like he was being very combative, I will address more in UKG. I know in Jess's notes she said he didn't check in with me when he left, so we could have a conversation, but I did ask him about getting cut, and he said no, he needs hours, and then I said well it's pretty slow, but we didn't finish the conversation, and next thing I knew he was gone. So, although he didn't check out, there may have been a misunderstanding. A few things I want to note, that was mentioned to me from other staff is- 

Amanda told me as I was printing menus that Peter just arrived, and came up to the host stand and said I hate Kristy, and that Paco felt uncomfortable working with him, and Anna and he were arguing already because he told her he didn't want to bus tables because he wasn't hired for that. Paco also told Amanda that Peter was taking signed receipts off the tables, and one of the tables had cash, and he couldn't find it, I'm not sure if Paco or Amanda mentioned it, I believe it was Amanda, and she said magically the cash reappeared, that could be something to look at on the camera? She said it happened around 10:40.

Anna pulled me aside twice to tell me she asked Peter to bus some tables and he said no. She had to go all the way to the lobby to tell him the second time, when she had 4 dirty tables, she said she could do it herself, but that it wasn't right for him to be here to bus, and be in the tip pool if he's not doing his part. It is also an issue that he is at the front desk at all, and Shelby complained to Jess about it, and will be documenting it in UKG.

Brandon came over from IRD to help bus, and he asked me what position was Peter working, and I mentioned bussing. I mentioned at that point to Peter that Brandon shouldn't be over helping us bus, when we have him on the floor. 

I mentioned to Peter a little later that he bussed the tables, but they still needed to be reset, and he said the hostess was resetting all day yesterday, and he was waiting for her to do that. I told him she was being helpful yesterday, but ultimately it's his responsibility. He said something about, "Oh my bad"

Once again lots of discussion about break laws / penalties, and Eve and Peter discussing it together in the middle of service, and Ruben had to let them know the conversation needs to stop, and they can talk to HR about it. 

So that was the biggest discussion Peter and I had today, that I felt was very combative. He approached me and asked when he should take a break, I told him that he shouldn't be staying longer than 6 hours, so it may not be needed, unless he wanted to take a 10. He reminded me, and showed me the law on the his phone about taking it within 5 hours, and I told him I'm aware, and that I wasn't sure if he would even be here another hour or so. I reminded him that yesterday, when he was here, and I asked him to stay longer that I gave him a break at the appropriate time, no problem, and that  if I thought he would be staying longer that I would give him a break at the appropriate time.  At this point it was 11:30 maybe earlier, and he had been there for 2 1/2 hours. It was a completely unnecessary conversation, he was talking to Eve, because she had her own issues the other day,  and decided to be combative.  

Once again I had a long conversation with Brandon about protocol, and things getting missed, I told him I would like to sit down and write out of list of things that need to be done a certain way, and procedures that should be done always the same. He seemed open to it. He also said things have been getting missed and overlooked since August, so I'm not 100% sure what might have changed around that time, and he said the word on the street is La Cocina is not that great. So I hope to improve that reputation if it's even true. I find that I get mostly positive feedback, but of course we have had our hard times, and complaints, but they are not constant.
