11/28/25 AM NOTES
Extremely busy day today, it took a bit for the European Breakfast busy, it happened around 8:30, and Mia was 30 minutes late, her child's day care was closed, and she had to find an alternative sitter. Once she arrived she asked me if I received her message, and I informed her I was too busy to see any messages on my phone. I told her all I needed at the moment was busser help, and to start taking new tables. I would say between 9:15 and 9:30 we got totally packed with only one server, and myself and the barista. We were also trying to keep on the breakfast station as well as the coffee station. It was a little too much, and I went to the front desk and said we have a 911, and if they could help. Zach held up the front desk, and all the others came to assist. Steven, Evelyn, and Shelby were absolutely AMAZING! Cleaning tables, resetting, running food, making green juice, I couldn't ask for a better team to get us through.
We then had a little lull after the European Breakfast and regrouped, putting Mia and Rebekah in stations, and Sydney at the pool Eve went home, and Ruben was at the bar & barista. I would say it got steady again around 12, and I thought we were fine, and I cut Mia around 1, as she was only scheduled until 2, and could not stay any longer than that. I was going to have Sydney watch the pool, and 4 tables outside, but she got a bit busy, and Rebekah can only take 4 or 5 tables max at once, and the inside dining room was starting to fill up a bit too. So, I asked Mia to stay, and that we would get her out by 2, since she was scheduled only until then, and she had to pick up her son.
Things changed soon though, we were still busy at 1:30 we had food taking a little long, and at 1:45 she said she would have to leave soon, at the time she had one table missing an item that was not on her ticket, she said he never ordered it, and another table who's food came out in pieces, salads first, burgers and sandwiches 10 minutes later, and fries that came when the group was pretty much done with their meal. Mia said she had to leave soon, I reminded her we gave her grace when she was 30 minutes late today, and two of her tables has missing items, and issues, and she's the one that knows what they need, so if she could give us 15 minutes or so, and make sure these tables were in order. She did finish them up, and helped get out their food, and left about 2:20.
One table could not be satisfied though, the one with long wait times on food, an salads coming out 10 minutes before the rest, a long wait time between apps and mains. I offered a round of drinks, guac, and the main issue items his burger without fries, and a side of fries. One thing to mention that I believe really triggered the guest is that Ruben brought the guest another burger with fries, and the guest said he had his burger he just didn't get his fries, Ruben swiped the fries from the other dish on the guests other plate, and the guest said he touched his fries with his fingers. Ruben said he did not. The guest was not satisfied with my offer of drinks and app, and the forgotten items, and when I ran his card for the remainder items and dropped off his paid check, I apologized again, and let them know this a rare occurrence, and he let me know that he was very upset still, and pissed I was asking him to pay the rest of the bill. So, I felt like there was no option but to let him know we did not have a check for him.
We also had a breakfast table today, a reservation, and their ticket got lost in the kitchen possibly, so they waited possibly an hour with food, we were also out of green juice when they ordered it, and we had them share 1 order between 3 guests, they suggested it and then more was made, and they had another, I offered them some treats from the European breakfast, since I could feel like their food was taking sometime, and then Mia informed me they were getting agitated, and so I checked in with the kitchen, and they didn't have the ticket. The food came out 15 minutes later, which ultimately was 45 minutes after they ordered, so I let them know I would only have a tab for their coffee's.
I had a discussion with Eve today who said what was I going to do, because she was almost on her 5th hour, I let her know, she could take a 10 if she liked, but a 30 minute wasn't necessary since she would leaving by the 6th hour. She was very combative, and saying no it's 5 hours, and that I was going to get a meal penalty fee for this, I tried to remind her that I've worked doing this for a long time, and I'm aware of the law. She brought it up on her phone, and said I was wrong, I did not look at what she was trying to show me. It was very frustrating because she was combative, and I honestly can't have interactions like that with the staff, we all need to be respectful, and I was to her, just trying to say I'm aware of the law. I also asked Eve since it was just Mia and I until 10 top please help keep an eye on the breakfast and coffee station, and we would keep our eye on the tables, and the guests. She said I'll do my best, but if I don't have to come out of the barista area it would be best. I really want to instill with the baristas and bartenders they need to come around the counter and assist, we are all a team, and this a pooled house, so we all need to support to make the best tips possible. Eve may need some counseling, Warner and I having a sit down with her.
Today wasn't all difficult, I can say that there are a lot of people doing there best, and doing what it takes, the front desk team so wonderful, Brandon, Sydney and Rebekah with good attitudes, and doing whatever it takes.
Next year we'll keep in mind we need to be fully staffed, and we need staff on the earlier side, as well as staff that can stay later, and support staff, a busser, a host would have been ideal.
Hopefully we can staff everyone at 6 hours, so they don't demand to leave at their end time, only Eve and Mia did that.
Brandon (IRD) is having a lot of frustration with dish pit etiquette (stacking the right glasses on the righ racks) collins, wine, and beer glasses all in the red/ blue rack, I 've been training the staff in Cocina, but it made need to happen beyond that. Also not double stocking collins glasses in one spot on the rack.
We also have not seen the key for IRD that is used to open all areas. Does one of the other IRD servers have it? I will try to investigate more.
Lots of voids
Full check for upset guests on table 17, breakfast and green juice for table 201, 2 bluefin tostadas that two different tables said were fishy. 2 guacamoles for 2 tables that Sydney forgot to put their order in. One carrot cake for a birthday dessert, and that it took them a moment to get sat for a reservation, we were waiting for the table ahead of them to get up, they sat at the bar util their table was ready.
