12.1.25 AM NOTES

 Very quiet today, with only 19 guests staying at the hotel. 17 guests joined us at the European Breakfast. 

Paco arrived at 10:30, as well as Rolo being there, James left around 11:30, and Ruben took over barista and bar. 

It stayed quiet, and I considered sending Rolo home, but Paco is still getting his pacing and can be slow with service still, so I kept him on just in case we had a lunch rush, and Rolo went home around 2. 

We had a manager meeting from 2-3 in Condor, and I told Ruben to grab me if needed, and let him know to keep an eye on Paco, and making sure that guests needs are met, if he gets behind. They didn't seem to get too busy, and by time I went back to Cocina they were almost finished up with sidework, and done for the day. 

We put up the chairs in Cocina, so that housekeeping could do a more thorough job on the floors, they were missing under the tables. It might be nice to have the floor buffed, if we have one, maybe once a month. The floors are pretty light, and you can see some stains even after mopping. 

After Jess fixed, and showed us the proper way to do the tip sheet, I'm hoping we won't have so many discrepancies. I walked every staff member through the checkout today, including IRD, who I've overlooked in the past. 

I will check in with Jess tomorrow if we have any kitchen call outs, Octavio was here for Sean today, so we were fine, but also pretty slow. We can discuss a limited menu, if that seems necessary.

 I am going to leave some notes, but add some later. Sorry late night.  KRISTY - can you follow up and ensure that by Monday/Tuesday we have someone sort the grinder issue. Luc replaced the grider with another for now, the one acting up is in the liquor room. You can reach out to Handlebar and Luc has another guy if needed but as I understand it Handlebar sold us that grinder. Please text the F&B thread if you need more contact info. 12/1/25 MEETING WITH FOH TEAM

 oops posted this on my LA BLOG - sorry for delay  Kirsty & Sarah got some Micros time and can put in and remove items! WOO HOO! I think Riley is all set  here too.  Pool floor plan we decided on and I can do it Thurs or Friday when I am back.  Peter is coming by at 3 pm on Thursday to meet with me and another manager, I will go over his written warning.  Lynn will have written warning re: customer complaint, Riley and Luc to do tomorrow.  Luc, Kristy & Sarah, when I am here Thurs and Friday we can review some former Employee Communications to review language and make sure all feel weel here with using UKG and having discussions.  PLEASE KEEP ALL TICKETS KITCHEN AM AND PM, I made a file folder next to Mac, we can review weekly.
