12/13/25 AM NOTES

 Steady day for most of the day. 36 European breakfast, a bit of a lull between 10-12, having the staff do some sidework during that time, helps keep them for doing it later in the day. 

I cut Anna at 11:30, she arrived today at 9:30, she was scheduled at 7:30, but was having car trouble. Zammy came in at 8:40, also 10 minutes late for his shift, I asked him while he was walking in if he was late, and he said yes, I reminded him to reach out even if you are running a few minutes late. 

Sydney also came in a bit late, she told me she would be there today around 11, but arrived closer to 12, it was fine, and she continued to text, and keep me updated. I would almost suggest that we turned the second 10:30 server in at 12 instead. Then we can keep them until 6, if there is support that is needed in the lobby. They needed help in the lobby between 4:30 and 5, and Sydney was able to jump in and support. 

We had covers for lunch today 28 to start, we finished with 38, which was a pretty steady day for us, with a two server section.  Yay, Resy is working!

I had Paco just focus on the pool, he got a bit of a later hit at the pool, but I'm glad I kept him on, he also supported with bussing when he had time as well.  

Zammy forgot to ring in chicken for a rice and beans bowl, and I only found out about it, when I came in to table touch. The guest informed me that his wife got her chicken for her dish, after he finished his meal, which means they didn't get a chance to eat lunch together. I comped the salad, and apologized for the delay. I also let Zammy know to get me involved, so I'm not finding out from the guest, as they were about to leave. I think that because he made a mistake and forgot to add chicken, he didn't want to let me know. I let him know I always want to know, even if was a staff mistake, so we can make sure the guest leaves happy. 

Ann made a large birthday cake for a 5 top for a birthday, Zammy also had that table, and was given a chit, and was aware that the cake was in the walk-in, and to ask Chef Ann for it, when he was ready for it. He did not exactly follow the direction I gave him prior to the guest arriving. He put in a regular order for the carrot cake, and not the $65 cake, I need to keep and eye on him, when it comes to steps of service. He also dropped the check, because the guest asked for it from Paco. I told him I would have held on to the check until after the cake was delivered, and then to have the check ready, righr after. 

Eric has been a good addition to the team, although he does say he couldn't work in there to often, as the money is not good enough. He said he is happy to help out where it's needed. 

Eve is showing interest in learning how to bartend. She is going to break tomorrow so she can train a bit with Eric. 

It would be good to have an extra person that can bartend in La Cocina, especially if Ruben is promoted. Anna also told me she has a friend who bartends, and is looking to leave OVI. So I would love to interview him soon, if Ruben is leaving us. 

Voids- rice and beans bowl for a long ticket time (Zammy's mistake), 1 Energen beer, Sydney put it on the wrong check. I told her she should slow down when putting in orders. She had made another mistake earlier with putting a hot tea on the wrong check. 

There was a table, who wouldn't let me comp their salad, but they didn't love the slimy-ness of the nopales on their chopped salad, I've gotten that complaint a few times since working in La Cocina.
