12/19/25 AM NOTES

 James called in sick, at 5:43, only 30 minutes before his scheduled shift. Brandon as always was happy to support in making espresso drinks if necessary. 

Ruben came in at 9, instead of 11 to help with espresso drinks, and set up the bar. He mentioned he wasn't feeling well, and brought cold medicine with him. I broke him at 10. Once he got back from break around 11:30 he said he definitely wasn't feeling good, and had to go home. 

Mia also mentioned she wasn't feeling good, and I asked if she could wait it out a bit until 12:30 to see if anything happened with business, she seemed fine with that, but once Ruben went home, she wanted to go home as well, so she finished out the table she was waiting on, and went home from there. 

Cocina was not very busy, with just a couple of tables, so Paco was handling it. 

There was a table that didn't care for their bluefin tuna tostada, he thought the fish would be cooked, I let him know it was cured, but no that it had not been cooked at all on a grill etc. I recommended the fish taco, and he liked that better, he said the fish was delicious, but didn't love the batter. I do think he left happy, but it seems he was here yesterday as well and returned something yesterday as well. 

We had a buyout meeting at 2 yesterday, and with Paco being alone, I had Claire from IRD come and support Paco, but I let them both know to come and get me if necessary. Ruby did come and ask for bar support, as there were a couple of people at the bar, but she grabbed Lauren instead. Thanks to Lauren for coming over to help! 

I will say when I came back to Cocina after the meeting, it did feel a bit stressful, as there were 2 couples at the bar, and one table outside, but Paco had a few groups at the pool. I came in and helped the bar guests, and started making drinks for the pool. It all worked out, and Claire went back to IRD. 

Paco and I cleaned up and got out a bit late, Paco went over his 6, there was no real way around it, and I would have given him a break, if Ruben and Mia didn't leave all of the sudden.
