12/28/25 AM SHIFT NOTES
Steady European Breakfast with at least 50 guests, plus a few reservateions fro breakfast. Started being busy right at 7.
Paco came in at 8:30, and took section 1, Anna on section 2, both had a good amount of guests, Paco got 3-4 tables within a 15-20 minute period, and got behind at one point, he forgot to put an order in for one table, they were very nice, and gave them a few items on the European Breakfast to hold them over. The other table was a 5 top, and had to ask to have their order taken. He said the coffee's put him behind, but I let him know that he can always move ahead with an order, and let the guest know that coffee 's will be out soon. It ended up being fine, but it would have been better to have quicker, and more efficient service.
Anna got cut at 10:30, when Sydney arrived, but she was finishing up tables, and doing sidework, and ended up leaving about 11:30.
Paco and Sydney were pretty steady the rest of the day, Sydney was also checking in with the pool, and there was a decent amount of guests over there. We needed to put Sydney on break, and it was a bit difficult with the amount of guests we had. We made it happen at 2:30, and Ruben helped pick up anything at the pool, and he and I both watched the couple of tables that Sydney already started.
Paco took anything new once Sydney went on break, he was fine.
Joeanna left at 2, she did a great job hostessing, and seemed to like being in La Cocina, so we're happy to have her work in here anytime.
Sundji was scheduled until 2:30, and typically can't stay much longer, so it may be worth scheduling him until 3 if possible, just in case we get busy and need extra hands.
Paco odered a double burger for a guest, they had a dairy allergy, and he forgot to put no cheese. The guest was nice about it, and was too hungry to wait for a new burger, so she scraped the cheese off. So, I of course did not charge her for her burger, so it was a $33 discount on her bill.
