12/5/25 AM Notes
16 guests for European Breakfast, so not terribly busy. Mia was about 15 minutes late for her shift, which seems to be a constant issue.
We cut her by 11, since there were 2 more servers coming on, Paco and Rebecca were left. Paco took the back, and the pool, but there were only a few people at the pool today. I cut him around 1:30 to assist with Rebecca, but I could have cut him earlier.
We could probably omit one server, and have Mia stay until 3:30, instead of cutting her right away. It's hard though, because Paco only has so many shifts, and Rebecca only works one day a week.
We got a bit of a rush around 12:30, probably 5 tables, and it stayed a bit steady until 1:30, all the tables outside were full at one point. Nothing too crazy.
Eric Goode came around 2, all was good, except I've been training the staff to ask about fries with burgers, since it doesn't come with it, so that the guest doesn't expect it, and they have to get fries on the fly, but Rebecca didn't ask, so I asked her to double check, and ask before the burgers went out. She checked and sure of enough they wanted fries. This is going to need to be a habit to enforce and train with the staff.
I feel like Paco, and Rebecca could be faster, and see their guests as one big table, instead of going to one at a time, that will need to be trained, and enforced, steps of service needs to be instilled in them, and I'm definitely trying and coaching.
Table numbers have been changed in Cocina, and the pool, Yay for the pool numbers to be changed! So the 200"s outside, are now the 30's. 31-38. Bar stools are now B1-B8. It should be an easy adjustment.
I will show the staff the next few days or more the new numbers, as well as the pool.
We're leaving the well up for Friday and Saturday night to help with the snug, and lobby, but it may have not been necessary tonight, since we didn't have 2 lobby servers, it may be best to check in with Luc and Sarah on those days to see if it's necessary.
Chef Will cane up to me at 5, to mention that the snug bar is asking about guacamole that was up for 10-15 minutes, and they had been waiting on it, they need to check in and run their own food, they should have time to make it happen, especially since Claire was on break.
The coffee grinder in IRD went down, and I reached out to Sean for assistance, after some back and forth we got on a call, with no resolve. He was possibly going to check it out later, but Luc pulled out another grinder.
I'm hoping we can get back on track with signing out the IRD key, the key and the list are in IRD, we just need to be able to track who had it last, or worked last with it. It went missing for about a week, which was a bit stressful.
It looks like we need to order more wine glasses for the floor, I asked Brandon about it, and he said to let Luc know, I will mention it to Luc, but I wanted to mention it here, just in case we get sidetracked.
