12/6/25 AM NOTES

 Steady European Breakfast with about 30 guests, and then a bit of a lull from there until 11:30, it gave us a chance to break the bartender and both servers, since they would all be staying over 6 hours. 

Anna called out yesterday for today, which was fine, I adjusted the in times for Zammy, and Paco so that we had two servers at all times.

Peter called in and said he needed to be on medical leave until December 16th, Jess connected with HR to see what the next steps are, we will get more info from Barbara on Monday. Amanda was the hostess today, and is a great support when it comes to bussing and resetting the tables. The team also chipped in with that as well. 

We had a thorough pre-shift with the table changes, and numbers, and went out to the pool to discuss numbers as well, the new number system at the pool already seems so much better. 

I also let the staff know that we will be ordering from the table on the screen, instead of putting a table name to create their check. It took a minute, and pushback from Eve about it for a moment, I just let her know this is how we will be ordering from this point on. 

We got a bit of a push at 3:30, the Koch party was checking out the space, and moving some stuff around for Hawk's birthday party, so they got a handful of drinks and guacamole, and another few tables sat outside, and the pool had some last orders put in. Paco was focused on the pool, so Ruben and I assisted with those last orders. 

Brandon got a bit upset today about polishing, and was extremely frustrated that a couple asked for ice, and glasses for their champagne, and the two glasses he took up to them had water stains on them, the couple noticed that they looked dirty, and he had to bring up a new set. We need to make sure we're polishing wine glasses better too, he pulled 8 from the lobby station that needed to be repolished. Hopefully we can get the team better about polishing. 

Paco did not get a room number for a guest at the pool, so I needed to void their check, and we're hoping we'll see them tomorrow to get payment. He dropped off their check, but they didn't sign, I let him know as soon as they order one item, to take their room number at that point, right it down on his notepad. 

I had a lot of coaching with Zammy today, with seat numbers, auctioning, taking his orders from the guest in order to stay organized, etc. He wanted a pancake out to share before the rest of their lunch, and he put it in first, and then on a separate check put in the rest of their lunch, well the pancake has a long cooking time, so it all came out at the same time. He was able to serve the Vampiro tostadas later, but he forgot one persons dish at the table as well, they took it home, but we took care of their dish for the wait. I'm trying to get the team to let me know if they have a dish that is taking longer than 15 minutes, he alerted me at 12 minutes, and it was almost done, and I said it was completely on time, I said unless you forgot to put it in, and now you're waiting another 15 minutes for it. He said that was the case, but did not tell me that up front. So, i sometimes need to keep my eye on Zammy to make sure he's doing things correctly, he's still new, and still learning things.
