Trent left IRD looking amazing, I spoke to him about it and mentioned how clean he keeps it and that I appreciated it. He said that he saw the message/announcement about how it was left previously so he made sure to make it clean and always tries to leave it clean. I gave him a positive feedback on the UKG thread. 

Pretty quiet night in both condor and snug. 

IRD AM Paperwork-- PM MOD should double check cash out. Reprint service report with PM IRD. Trent brought me both AM & PM and numbers from Ryan's cashout in the morning did not match- they got orders after he left. So I updated Cocina tip sheet. Kristy and I texted and decided that it would be best for PM MOD to just review and make sure there were no orders after AM left. 

Jill had a guest in that had a reservation at 6pm for 2 guests. Asked us to send three starters and have them ready for when they arrived. Guest arrived, just solo, so we only sent out one of the apps. Had to comp and waste the other two. Guest was happy and had a good visit. 

Shelby had me comp dessert for a couple at the bar, they had just checked out today but I guess they had a rough start to their stay. They were pleased. 

Emailed kirsten about event staffing next week, will discuss more with her tomorrow so we will have to hire from event staff until we find a new bartender to replace lynne. 

Started schedule for holiday week, time offs that are on there will be okay, but I have a message out to grayson because he has tuesday-saturday requested off. Really messes with bartender schedule. 

Lauren requested she get an earlier shift on NYE, told her it will be an all hands on deck but I will do my best to schedule her to her wants, but no promises. 

Interviewed a busser today, Sundji Hart, he is great. Pending onboarding through indeed because I do not have correct permissions. I will set up a training schedule- looking to staff him in cocina on weekends and utilize him in condor during weeknights. 

Event for friday is staffed, but will clarify with kirsten tomorrow during beo meeting that only two servers are needed and no bartender. 

Jean cut at 7:30, slow in snug. Chad did well for the rest of the night. I did have feedback from a friend that service at snug bar top wasn't great on sunday night. Briefly talked to Luc about going over steps of service for bar and then being able to start really making sure bartenders are being personable, and not just bartending. 

Possible host candidate- grace - referred to by Amanda, will be interviewing her sometime this week, Sarah reached out to see if she was available tomorrow.

 I am going to leave some notes, but add some later. Sorry late night.  KRISTY - can you follow up and ensure that by Monday/Tuesday we have someone sort the grinder issue. Luc replaced the grider with another for now, the one acting up is in the liquor room. You can reach out to Handlebar and Luc has another guy if needed but as I understand it Handlebar sold us that grinder. Please text the F&B thread if you need more contact info. Brandon or Warner can get us. Thanks for handling this and keep us updated. 12/1/25 MEETING WITH FOH TEAM

 oops posted this on my LA BLOG - sorry for delay  Kirsty & Sarah got some Micros time and can put in and remove items! WOO HOO! I think Riley is all set  here too.  Pool floor plan we decided on and I can do it Thurs or Friday when I am back.  Peter is coming by at 3 pm on Thursday to meet with me and another manager, I will go over his written warning.  Lynn will have written warning re: customer complaint, Riley and Luc to do tomorrow.  Luc, Kristy & Sarah, when I am here Thurs and Friday we can review some former Employee Communications to review language and make sure all feel weel here with using UKG and having discussions.  PLEASE KEEP ALL TICKETS KITCHEN AM AND PM, I made a file folder next to Mac, we can review weekly.
