Condor: Quiet on the books (62 covers) though we had an early push. Multiple reservations came in 30-90 minutes early, we accommodated all but it was a little tricky. Lobby filled up by 5:30, D'ete had a couple parties complain about service and wait times. I think she came in hot at 6:00 and it was already busy and she ran right into the weeds.
Voids/comps:
Voided a misring from Alfonso, rang a full ticket under IRD by mistake.
Comped two desserts for gm of the Dutchess.
- Christopher from housekeeping spoke with me about Eduardo (Busser) being prickly with housekeeping staff about bringing bus tubes from in-room dining to the dish pit. I spoke with Eduardo and told him to accommodate them the best we can if it is very busy and the dish pit is slammed they can stash what they bring in the Cocina kitchen temporarily and we will move it into the pit when there is space.
- Corinne (host) would love to work more IRD shifts. Or more shifts in general.
Snug:
Busy through most of the night. Ramin's party migrated to lobby at around 10:45 and stayed late.
Spoke with Jess about designated MOD focused on lobby from 3-8pm to provide additional support and oversight. Two lobby servers, one snug bartender and one Cocina well bartender is the best lineup for busy weekend nights.

Ramin's event was successful. They stayed late and moved into lobby after. Had some difficulty getting snug bar shut down. Collin felt compelled to not break down on closing at 11:00, saying he works for Ramin. Though that is true, it is also not fare to the tip pool to do so and he is not in a position to make that call himself without mod guidance.
Night cleaning crew does not routinely clean event space unless advised otherwise, with more utilization of the space will need to improve process and communication to ensure it is properly being broken down and cleaned.
The bar fridge lights (or lack thereof) in the prefunction are being addressed by maintenance.
The coffee grinder in IRD (drip not espresso) went down earlier today. I swapped it with our old coffee grinder in the liquor room, which still works fine. Will follow up with Kirsty/Handlebar and repair tomorrow.
Closing MOD's: Moving forward please physically check Server/Bartender/IRD stations on checkout before they leave. The side work station and IRD corner in the kitchen was left in complete disarray tonight. Uneaten food, drinks, honey, sugar, milk spillage, and coffee grinds were caked everywhere. It will attract pests and damages equipment. IRD should be breaking down and cleaning espresso station, servers should be cleaning and resetting the side work station before leaving. To that end, bars are frequently not thoroughly cleaned, citrus fruits and garbage in the ice wells, fridges not restocked ect. The Condor sections are also routinely not fully broken down by servers There has not been enough accountability, their station close should be confirmed visually by MOD before they leave.
