1/19/26 AM NOTES

 Very busy European Breakfast, with occupancy at 96%, there wasn't a big rush all at once, but consistent all morning, we had a bit of a late rush at 10 as well, and we took down the breakfast at 10:20. We ran out of a few items towards the end, quiche (did not cook correctly), meats, and cheese, it didn't make sense to make another plate 7 minutes before 10. 

We were scheduled for a typical Monday, not a holiday Monday, so I did ask Maureen and Satia to come in at 9. They were both able to make it happen. It would have been good to have one more server, and a busser for the day to stay ahead of things, and give the pool 100% focus, although the pool died down after 1 pm. and with a lot of guests that had checked out for the day. 

I asked Ryan in IRD to keep an eye on us though, and offer assistance if necessary, especially for bussing, and to please keep the coffee station full for us during European Breakfast as well. He did okay, not trained up and aware as Brandon would be, so I had to constantly remind him to help out with things. He was also running food during our lunch rush, and dropped it off at the coffee station, and I asked him if he knew the table numbers, and he said some. I told him we need to work on that, and that it would be helpful if he could take items to the actual tables. (Claire and Corrine are good about that when they come in for the evening shift, and will even run items to the pool if necessary)

There was never a lull like we typically get between 10:30-12, we stayed a little bit busy, between the pool and a handful of guests on the floor as well. But, I asked Eve to stay to break Rolo, and I had the best intention to break Maureen when he got back, but we just couldn't make it happen. When Eve broke Rolo as well she went over her 6 hours too. I didn't realize she clocked in 6 minutes early until after the fact. But we did break Satia, and Rolo. 

I had Satia take tables for Rolo when he broke, Eve watched the bar and barista during that time, and Maureen had her section. I was watching the pool. I learned later that Satia was not happy about watching tables for Rolo while he was on break. I really need to emphasize, and Riley on her days as well, that the bartender and the barista need to help on the floor more than they are, and remind them it's a tipped pool. I can't stress that enough, and it's the only way that will help Cocina thrive is with teamwork. 

It was busy up until we closed, and Rolo who typically stays until 2:30, left at 3:45. Satia was working a double and needed to break before her next shift, and she was able to finish up by 4, and make that happen. Maureen worked a 7 hour shift, and finished up at 4. 

Maureen did a great job on her first day back after a long hiatus. She needed to be updated on menu changes, and had to ask questions, which is to be expected. But she has a great attitude, and is exactly the kind of server that we need in La Cocina. She goes with the flow, does anything that is asked of her, is a team player, and is grateful when she is offered help, it's really refreshing.
