1/12/26 AM NOTES
Steady for European Breakfast, it was a good flow, Rolo and Eve took good care of our guests. The women from the Sunkin retreat came in early, and at separate times, with separate checks, so it was a little stressful with that for a moment, but not a big deal.
We had Rolo on solo until 12, waiting on Alejandra to arrive, and then we got busy enough from there to keep him on, until 2:30, unfortunately he had a break penalty. Warner came in for a meeting with Danny, and had lunch on the patio, so one more reason to keep Rolo on a little longer. We filled up outside and we kept busy until we closed at 3. Alejandra forgot chicken on a salad, but the guest was nice, and we got it out as soon as possible. We removed the charge for the chicken, and I offered dessert or coffee on us, but she was fine.
We didn't have any guests at the pool yesterday, besides one couple who was staying with us, they had to come in Cocina to ask for service, which I apologized for. They were nice, and I recognized them from breakfast in the morning. The only thing is the husband complained about the strength of the margaritas, and told Rolo that the margaritas weren't great. I was going to alert the front desk, and see if they could do something for them, since they already paid for the first margaritas they ordered, but ultimately the guest came in to Cocina, and the gentleman ordered another one, and I offered it on us. He seemed to be pleased, and grateful for that.
Satia worked her second day at the bar, she's doing pretty good. She shorted the margarita, and said that Condor never batches their margarita, so I will have to ask Luc about that. I would imagine if we are batching, we wouldn't just be batching for La Cocina, which does the least amount of volume. Because she's not used to batching, I believe she was making the margaritas a little short.
We needed to move tables to Mariposa after service, the front desk assisted.
We got out close to 4:15 or so.
La Cocina sales- $1135
