1/13/26 AM NOTES

 Very low occupancy for the hotel today, so European Breakfast was slow with only 11 guests. I cut Eve at 10, since Mia could do coffee's at 10:30 if needed. Rolo can do coffee too if needed. I cut Rolo at 10:30 or so, once Mia arrived. 

I put Eve on a project to match the coffee tops, and bottoms together. We have two cup sizes, and two top sizes. She said we should be good to go with the coffee sets (to go)

Mia stayed until about 2, since our lunch rush had died down, and we only had two new tables. Jean took over, and helped a couple guests at the pool as well. Jean does not do good though with time management, and prioritizing, so although he was good to go to the pool, he did not really help the other two tables that were seated. I helped one, and Mia helped the other. Mia left once the orders were in, but I ran the food, offered condiments, cracked pepper, etc. and then I checked in with the guests, and cleaned up after they left. I don't mind helping at all, I actually really like it, but Jean did not follow up at all. Next time, it could be best to cut John, and leave the server as the one who stays. I could make drinks for the last hour, or even really in a pinch ask the snug to help out. It's just a thought for when we need to cut and watch labor, making sure he have the strongest person on the team stay. 

Mia asked about the audit, and when we'll know if they are owed something, she even said that Riley said the new sheets that we've been doing are also incorrect. She also said that by law since these are wages due, that we would owe interest on the wages due. So, just something to be aware of, and hopefully she's not talking to a bunch of other staff about this. 

We brought in the patio tables from Mariposa, and one fell over, and broke. Daniel was there and saw the incident, he has Jeremy and the maintenance team working on it. The broken table is sitting in Mariposa in the meantime. 

We finished up closing Cocina at 3:45, two ladies brought there drinks outside from the snug. 

Do we have a house account for Danny Bendette?? I've been closing his items through Daniel Grunswald for now, and typing in Danny's name for the subject. That is probably a Brooke question.
