1/17/26 AM NOTES

 Occupancy was high for the hotel, so European Breakfast was busy, it started at 7:30 and continued all the way until 10. Since it was paced consistently through the morning, we had a good rhythm, and kept up well with replenishing the breakfast, and making sure we had tables clean and ready to go for guests.

Zammy ran a bit late, but Anna was good on her own until he arrived. Anna was cut soon after the rest of the team arrived at 10:30, and after pre-shift. 

Paco was at the pool for the day, and not on the floor, with the occupancy I left a pool server on, and he had a good flow of guests for most of the day. He got the busiest at 3:30 though, and it was a bit stressful, because the floor got a little busy at the time as well. 

The kitchen got a bit annoyed that I didn't communicate open menus at that rush, and we're surprised they got so many tickets after 3 pm. Brandon approached me about it, and I let him know I would communicate it better next time, it just got busy out of the blue, including the pool, and I didn't think to stop and check in with them. So, I told him, and Chef Sean the next day I would communicate at the end about open menus. I also let the kitchen know we need to seat until 3 pm, with orders coming in possibly until 3:15, since we now close at 3 instead of 4. 

There was an order of fries that were ordered and lost somehow from the pool,  it had a 30 minute ticket time, the kitchen said Claire took them, but Paco said they were still missing. We've discussed numerous times about getting me involved if they had a ticket time longer than 15 minutes, so I'm not sure why Paco didn't get me involved sooner. I checked in with the guest, and took the fries off the bill, and they were very nice. 

Since Paco was going to be at 8 hours at 4, and he did take a break, I asked Claire if she could watch the pool, she checked in with Sarah and Luc as well, and they agreed that she could take her break at 5. Claire although she means well, sometimes takes a minute to warm up, and know how to best go about things smoothly with the guest, so I had her take any new tables at the pool, and not have Paco transfer anything to her, to ease any confusion. It worked out fine, and Paco got off the clock soon after, and Claire had just a few pool orders mostly for drinks. I realized with the nicer weather, and especially this weekend which was a long holiday weekend, it would be ideal to break the pool server, and have them stay until 5 out at the pool. I did that on Sunday, and it worked out well.
