Comps:

Pear Salad- pears very hard. Guests were nice about it. Did make a comment about their coursing, bartenders sent it all at once, and they were hoping to have entree items coursed out a bit better. 

Service:

-Service had a few hairy moments- Alfonso reluctant to take a table when Keegan had 4 new tables. Could not handle a 5th, Alfonso did not help out. Once the table turned, new seating was given to Alfonso. I did not ask if he could take it, I had to give him clear direction. 

-Lobby was full and steady all night. Bussing was falling through certain points. Servers should not be taking new drink orders if the tables are dirty with the new customers. 

-Through table touching, guests were happy, high compliments on food. 

Plan for this week:

-Lobby: we will start assigning sections. 2 servers- split floor between 2 servers. 1 server & 2 bartenders- give bartenders section close enough to bar. 

-Condor: when there are 2 bussers we must assign sections to each busser. 

-Shift notes this week: full hands in, full hands out. Empty plates on other tables outside your section, see if we can bus. Let's keep drilling in pre bussing. Servers should not be dropping a check on a table with dirty plates or empty dessert plates. 

-Chit hand offs- host to give servers chits for every table. There was too many "I didn't know that table got sat"
