1/18/26 AM NOTES

 Really busy day. European breakfast with 85 guests in house was really busy, Paco mistakenly thought he was scheduled at 10:30, so he didn't make it until 9. Anna was solo until that point, it was just me and her on the floor, and she did well, but it was difficult to clean and reset tables. I asked Brandon to please help us with bussing, he of course did, but was a bit frustrated. I let him know that the busser would be there in 15 minutes, and he said that is not soon enough. I also let him know if Paco showed up in time, we would have been in a better situation. Danny also came in from breakfast, and he asked if we just finished up a big rush, which we had, and were behind, but we were getting back on track. 

Once Sydney and Zammy arrived we cut Anna, did some breaks, and had a pre-shift that was a little longer and thorough. I brought up uniform standards, and making sure our uniforms looked good, and hair was up and back if it was long, I also let Sydney know the day before that she needs to secure her hair better and if possible braiding would be ideal. I got a little push back from Eve in regard to ironing her shirt, that she doesn't own a iron, and has no plans to buy one, and that she thought we were providing a steamer, I let her know we have one in the locker room. Sydney said the steamer isn't great, but I let the staff know that it is still their responsibility to keep their uniform looking good. 

I'm working on quizzes with the team, and for the most part they're doing well, but I did get pushback from Satia, and she said the way she works should be telling enough of her abilities. I let her know the quiz is pretty simple, and to expect more in the future. 

The day was busy all day after 12, and the pool stayed steady with at least 20 guests at all times. Zammy took a break so I could keep him out there until 5. We didn't get much of a rush at 3, like we did on Saturday, but I made sure to communicate open menus with the kitchen anyway, at 2:50 we had 2 open menus, and that is all we had for the rest of the day. Zammy had some orders at the pool, but not many food orders, just drinks, and once Satia finished cleaning up the bar in Cocina, he got his drinks from the snug.
