Cocina was not properly shut down. Jean Zarate left the bar a mess- the three compartment sick was not drained, the ice wasn't entirely burned, and not all of the were bottles covered. He did not clean under mats on the bar. The espresso machine was not flushed, the wand was left with crusted milk, and there was espresso debris all over. We talked about giving him a formal UKG warning at his next shift.
Also, if syrups are low bartenders should be batching them.
The 14 top for OBE went well. Keegan did a great job from beginning to end. I was glad she was able to come in. Even though we didn't have high covers, it would have been too much for any of the other servers to take on in addition to their section. Service would have suffered. Not great for the tip pool, but definitely better for guest experience.
Snug was pretty slow all night.
Claire came in to do her checkout before I had officially cut her (it was 8:50). I said, "the kitchen is open for 10 more minutes. Let's wait in case someone orders room service. She said, "the kitchen closed at 8:45." I am confused about the protocol with regards to the kitchen closing and room service.
minimal comps/ voids and not much more to report.
The books look super light tomorrow and I'm thinking we should see if anyone wants to volunteer the night off as we have 4 on. I will check the books again early afternoon and then send a text to see if anyone bites.
