1/25/26 AM NOTES
Very busy European Breakfast, a large part from Warner's friend's birthday. We kept the Euro breakfast out until 10:25, due to late comers.
Eve cut at 10, which was not through me, but she told me Satia was good to take over. Cutting like that is not ideal, and I will let Eve know tomorrow, that I would like to know what they are thinking about before making the decision on their own, which is unacceptable. It worked out fine, but Satia did not take a break, any typically Eve will break her, but Anna broke her instead.
I cut Anna and Alejandra after pre-shift, so we were down to Satia, Zammy, and Sydney by 11. Plus Sundji and Naomi on the floor. I kept Sundji and Naomi on until their scheduled time, and broke Sundji prior. I could have cut them, but it allowed me to work on sidework sheets.
We ended up having 28 covers at lunch, not too many, but the staff kept busy. Zammy was taking the pool as well, and had just a few couples over there throughout the day. Sydney helped one couple in the lobby. Steven from front desk chatted with me about communicating with us when they bring over a guest to the pool, and we discussed checking in on those groups that join us after Cocina is closed. That is something we should have a protocol for, until we get busy enough to have a pool server again. IRD or the lobby server might be a good option for the hours between 4 and 5? Steven said they could also help get orders as well, and give them to whomever is on staff. It hasn't been too much of an issue, so we can discuss it more, if it does become an issue down the road.
We are out of sunscreen, lotion and spray, and I talked to housekeeping, which does not order it for us. I talked to Shelby, and she said it was something that Meredith was doing, and Riley might be the person to order it from now on. Shelby said maybe we have some in the office??
Zammy ordered 2 burritos instead of a burrito and a pancakes, the guest was fine, and sharing, so they were fine to wait, and very nice. But, that did back up an order for Sydney, but once again, I checked in with the table, and they were fine as well, and not in a hurry.
Sydney ordered a taco plate, and didn't realize the shrimp tacos come on a flour tortilla (I was also told differently when we originally changed the menu), so she had a guest with a gluten allergy, and they had to be remade. The guest was completely okay to wait, and had fries that she had ordered, and said everything was delicious.
Sydney got a really nice guest compliment, and it's great to see how well she connects with her tables. This is not the first time I've received a compliment on her service, and this is the type of service, we would like to see in Cocina more often, connecting with our guests.
We closed down at 3, with our last guest sitting at 2:50 for just drinks.
