1/28/26 AM NOTES
Mildy busy Euro breakfast. Daniel came by to get his matcha, and nobody was in La Cocina, Rolo walked away for a moment, as well as myself, and there was nobody in La Cocina. Daniel said, we should never leave it unattended, so Rolo and I discussed checking in with each other before we leave the space. We were probably gone for less than a minute, but completely understand making sure someone is there to greet and welcome guests.
Daniel also mentioned getting guests room numbers upon arrival, which we implemented before, but found it to be repetitive, or confusing to the guest when they went to pay, as they already gave their room number, but we will ask room numbers upon arrival again, and they can of course give their number again when they are paying their room charge.
Once the morning was over, we broke Rolo, called off Marlowe, the 9 am shift during the week doesn't seem to be needed, but Riley and I can discuss that, and see what we should do moving forward.
Anna also went home after 2 hours, because she wasn't feeling well. Rolo was quiet enough to take care of coffee's if necessary.
We had a party of 11 scheduled at 11:30, which was great, and we stayed busy from there. We had about 45 covers for the day, and everyone did well. Mia and Rolo were on the floor, and Jean helped fill waters, buss, etc.
We stayed busy most of the day, and our last seating was a little after 2, and we finished up shortly after 3, maybe closer to 3:30, we were also trying to leave the space ready for the Omakase dinner happening that night.
One panacake was returned for being too crispy, the kitchen remade another one, and the guest was happy.
We sold out of Nicoise salad, we were out of the potatoes and hardboiled eggs for it, this is a salad that we are out of often. It does sell well.
La Cocina sales $1435
