1/30/26 AM NOTES

 Mia called out sick last night, and I reached out to Sydney to come in at 8 instead of 7, so that she could close with Zammy, and I pushed Zammy's time back as well so that he could close for the day. 

All was going well, but around 9 am, Sydney got really busy, we had a 11 top, and a 6 top both hotels guests, but the 11 top ordered food, and didn't do much of the European breakfast, so it put Sydney behind a bit. She had taken the same group yesterday for a private event, so she had a good rapport with them, but once again put her behind a bit. We also had a decent amount of tables that were not guests at the hotel coming for breakfast, I think because some restaurants were closed nearby for the ICE strike. 

Zammy arrived, and helped to get us caught up, and we tried to put Sydney on break, but she had a few tables going, and then soon after Kiersten came with a group of 8 for lunch. I told Sydney to stay on to take that group since they were VIP's, and then we put her on break after they finished lunch, and were about to pay out. When Sydney went on break, Zammy got pretty busy, and we needed assistance at the pool as well, Erick helped at the pool, I helped a few guests in the lobby, and Zammy did good in Cocina, but I did feel like a party of 5, had a bit of slow service. I dropped off their check and apologized for any delays, and that we were a bit busy today. They said everything was great, so I do believe they left happy. 

When Sydney got back from break, we had the biggest rush at the pool, so she focused on the pool, and Zammy took the rest of the tables that came into Cocina, we only had a handful more come in, and he worked on most of the sidework to close up for the day. 

All in all it was a good, busy day. It would have been nice to have Mia on the floor as well just to run more smoothly, but we handled it. This is not a typical Friday, but with the strike, beautiful weather, and the hotel being busier today, we had about 44 covers at lunch, not including breakfast, and the pool having action as well. 

One check was voided, because when Sydney was on break I couldn't find table 32, and they needed to pay, so I rung it back in. She had a lot of open checks, and I think she ended up putting it on table 31. Nothing was made on the second check I rang in. Sydney had another void for two glasses of wine that were put in incorrectly. She was poured the correct wine, and she put in a new check with the right wine on it. Zammy had a comp for a side of fries, he had a guest with a club with chips who wanted to trade the fries for the chips. I let him know that in the future that it's not an option to swap the two, but to give her the sandwich back as is, and we would bring out a side of fries. I told him we would comp the fries, and would be easier than giving the whole dish back to the kitchen. I will put it in pre-shift so that all staff knows that fries instead of chips is not an option. 

We sold out of tortilla soup, and shrimp towards the end of lunch today. 

Also, I spoke to Octavio about how we set aside soiled linen, and I let him know I was told that the staff ties it in a knot, and put it in the same bag as the other linen. He said there is no way they are going through the linen to decipher between the two, and I told him I would chat with Riley, and that we could separate the two linens, by putting aside in a to go back, or trash bag? Something that makes it stand out.
