1/31/26 AM NOTES

Eve came in at 7:30 with Anna, since her car broke down. We would have been okay with just one of them, but after how busy it was yesterday, I wanted to be cautious. Anna was also feeling under the weather, and told me when she arrived, I let her know we would let her go as soon as we could, which would most likely be when Alejandra arrived at 9 am. Because we didn't have Sundji this morning, I waited a bit to see how European breakfast would be, but we didn't get too busy, and I was able to let Anna go.

Anna has come in, or complained about being under the weather the last two shifts she's been scheduled, and has gone home early. I do appreciate that she has come in though, so we're not without a barista. She does have a pretty consistent issue with leaving early, or being sick, or having some sort of emergency.

After, European breakfast, we went down to Zammy, Syd, and Alejandra, Zammy was at the pool because it was such a nice day, and we had a 84% occupency. Zammy actually stayed busy at the pool for most of the day. Cocina was pretty low-key, and I cut Alejandra around 12:15, and Sydney handled the floor solo, since Zammy was busy. We had 26 covers, so Sydney was fine.

We've been talking about in pre-shift, teamwork, and all helping out, and I'm seeing the team improving in that way. I reminded them that they share tips, and if a guest can get better, quicker service they'll tip better, and it benefits them all. I especially see a difference in Erick, and he's becoming a great part of the team. He connects with guests, especially ones that are at the bar, he really talks about what we're doing here at Roblar, and even talked a couple into making reservations at Condor for tonight.

Octavio approached me today to discuss gossip coming possibly from Cocina from Eve and Satia, and now traveling to Condor. So, I put it in pre-shift about keeping conversations professional, and keeping deeply personal conversations out of the work place. Unfortunately, Satia and Eve were not there for pre-shift, but I will continue to discuss it for the next week, and it might be a good thing to mention in our upcoming meeting.

Danny had a long conversation about addressing guests, and getting their name first, room number, and then the spiel for Euro Breakfast. It was a good conversation to welcome the guests, and get their information to put in Resy. Naomi also understood what the goal was, and is on the same page.

We closed up Cocina at 3, only one table on the floor, but the pool was still pretty full. I had Zammy take last orders for his new guests, and some that had been there for a little while, we got them to sign their bills. I talked to Octavio about offering food until 4 possibly, and the pool menus say 11-4, and then 4-8 on the other side, so at some point we'll need to figure out what will work best for the guest, and for us as well. He said until 4 is fine, but that they are putting away the items for lunch and prepping for dinner. I told Zammy to let the kitchen know if he puts an order in between 3-4, so it doesn't get missed.

Printer in the pool still needs to be replaced. Zammy just reminded me.

2 sides of scrambled eggs comped at breakfast, the guest said they were greasy and dry at the same time. They did not want them remade. 1 oj comped for Danny, he said the oj was actually too tart, and not great.
