1/3/26 AM NOTES
Decently busy European Breakfast. The staff only accounted for 20 European breakfasts, which means more people were ordering food then normal, the kitchen has been keeping up really well with demand. We did have two orders of uni and eggs that the kitchen said we were out of, but Octavio found the uni, which worked out, but the process of finding out, and delivering to the guest is stalled. I will check in with the kitchen sooner in the day, before service to make sure we have everything in stock, and to have them double check.
It showed we had 37 covers on resy for breakfast, and 47 for lunch, I feel like a few may have been missed, for breakfast, so it was a steady great day.
Sundji went home at 1:40, as I didn't want him to go over his 5th hour before going on break, and needing to be back at 4:30. He could have left at 2, which would have been preferred with how busy it was, but I discovered as we were talking about not going over his 5th, that he arrived at 8:40, that he hates to be late, and clocked in early. I let him know that it is appreciated that he is on time, but that he shouldn't be clocking in earlier than 5 minutes before his shift. He understood, and didn't realize that beforehand.
Naomi went home at 2:30, I kept Alejandra, and Sydney until the end at 3, and I let Sydney know that depending on business she would need to cover the lobby until 4, when the first lobby server arrives. She was good with that, but didn't need to help too much, as the snug bar had it handled, and the cocktail server took over from there.
Alejandra is doing great, she is very quiet, and doesn't ask too many questions, but I've been able to coach her with small things, like bringing out salsa's and announcing what they are, and being sure to mention nuts are in the macha salsa.
Closing at 3, has worked out well, but a few guests who just checked in are still wanting a bite to eat, I let them know that lobby/ snug bar can accommodate. I needed to remind the front desk though, as they are still used to sending guests to La Cocina.
