2/15 Condor/Snug

 Ended with 130 covers. Had 4 servers- Emma called out sick. We did not sit the 300's at all. 

We had the demand, but service staff would not have been able to handle it. Bar was full all night in Condor. 


Snug went well, very crowded again. Could have used three servers. We will run three servers and two bartenders moving forward with a floor manager on fri & sat & sundays (on holiday weekends). 

Dave Franco had a nice dinner. Greeted them with a bottle of n/a wine from front desk stash. 

Stevie Ellison was upset with their table placement, and I added a note to always have them reserved for 204 specifically. 

Ali struggled a bit through her second seating- but she had a handful of difficult tables- 1 family with 2 kids who asked for a lot (the kids) and another table that I touched many times as they did not love the sour cocktail they got and then didn't love the jicama salad (but ate it all). Just a seating of needy tables. She handled it well. 

Killian did not do great, needing constant direction. Seems like he was just not with it tonight. 


We are 86'd lime juice and diet coke. Octavio trying to see if sunrise can fulfill for tomorrow. If not, we will need to have IRD juice limes tomorrow morning.

 I am going to leave some notes, but add some later. Sorry late night.  KRISTY - can you follow up and ensure that by Monday/Tuesday we have someone sort the grinder issue. Luc replaced the grider with another for now, the one acting up is in the liquor room. You can reach out to Handlebar and Luc has another guy if needed but as I understand it Handlebar sold us that grinder. Please text the F&B thread if you need more contact info. Brandon or Warner can get us. Thanks for handling this and keep us updated. 12/1/25 MEETING WITH FOH TEAM

 oops posted this on my LA BLOG - sorry for delay  Kirsty & Sarah got some Micros time and can put in and remove items! WOO HOO! I think Riley is all set  here too.  Pool floor plan we decided on and I can do it Thurs or Friday when I am back.  Peter is coming by at 3 pm on Thursday to meet with me and another manager, I will go over his written warning.  Lynn will have written warning re: customer complaint, Riley and Luc to do tomorrow.  Luc, Kristy & Sarah, when I am here Thurs and Friday we can review some former Employee Communications to review language and make sure all feel weel here with using UKG and having discussions.  PLEASE KEEP ALL TICKETS KITCHEN AM AND PM, I made a file folder next to Mac, we can review weekly.
