2.16.26 PM NOTES

26 Covers >>> It was a sleeper folks!

Pre shift I spoke to Satia as she was closing down the bar in Cocina and she mentioned that Chad had told her that he's going to be out of town next week. She was wondering if she could take on one or more of his bartending shifts as she's been getting in practice in Cocina and would like to get some in at Condor. Might also be an opportunity for her to do some bar training at Condor tomorrow with Grayson as she is scheduled and it looks to be super slow again (could probably run with two servers).

Also, the rocks glasses should be put in the blue dish rack (or else they don't get fully clean). Only the water glasses go in the yellow dish racks. We need to drill this in pre shift all week and make sure all bussers and runners know this as well.

Chef Ann came to me with a ticket that was run into Snug Bar from last night. It was "dessert special" rather than the Choc Marquis. Sydney didn't realize it was under the holiday buttons. There is a $4 price difference. Long story short, Ann is asking that we completely remove the "dessert special" button for no further confusion moving forward.

Just a note that we are very low on the Face Nord Blanc de Blanc sparkling that we sell by the glass. I put an order in and it will be here Wednesday along with the Land of Saints Sauvignon Blanc which will be replacing the Habit.

Very chill night at the restaurant and in the Snug/Lobby as well. I don't see a need to schedule more than 1 busser on Mondays for the next couple of weeks (or until Spring Break drops).

Wondering why we stopped printing out nightly copies of the tip sheets and putting them in a binder and if we should start doing this again so that employees can come look at their tips and reconcile with their paychecks. I feel it would be good for morale.

I sent Jerry a message to see if he's able to come in for another server training shift on Wednesday. If he is I'd like him to train with Satia.
