2/22/26 AM SHIFTS

Busy Euro breakfast. We found it busy by 8 am, and I spoke to Danny about having staff on closer to 8, instead of 8:30, so that we can stay ahead of business, instead of playing catch up. So I asked Naomi to start to come in at 8:15, and Sundji to arrive at 8:30. Sundji arriving at 8:30 was a big help, but Naomi didn't arrive until 8:50, so that put us behind, and we weren't able to get guest recognition, like we would like to. 

I spoke to Riley about making sure we're prepped for Euro breakfast as well, she will be talking to Octavio. We ran out of our fruit platter, and I mentioned to Abel at 6:30 in the morning that we would need 2 platters for sure, which is the norm for busy weekends, he let me know that he was only one person for the day, and I said that's okay, that he didn't need to do it right away, but to do it soon as he could. I asked him once again around 8:30, and came back 20 minutes later, and he still hadn't made it, which at that point made it very late to come out & the fruit platter did not look great at the Euro breakfast. 

We had a small lull between breakfast and lunch, so we were able to give breaks, etc. Anna stayed and took tables she was scheduled until 1, but stayed until almost 3, thankfully. Soon Alejandra will be able to stay and close, so we shouldn't have to have Anna stay later. Paco was at the pool, he got a little steady, we weren't able to break him, because by time he got here and set up the pool, it was busy from there. He got off in time, before 6 hours, it just felt a little rushed to get him out. Once, we pick up for spring and summer, a pool staff that is here later hours will be necessary. Riley and I talked about that happening sooner rather than later. 

Lunch was pretty busy, and consistent once breakfast was over, we had 78 covers, which is great. We had a couple of small issues though. The kitchen overlooked an order completely, I went to ask about it 20 minutes or so in, and they said they never got the ticket, super frustrating because there was a pancake on the ticket, which is time consuming. I spoke to the guests, which are actually great regulars of ours, and they were understanding and patient. Anna forgot to put in an order for 3 ladies, and once again she was looking to see if their food was on the way, when she realized she hadn't put in the ticket. So, I approached the table, and sent out a guacamole on us, and explained the issue, and said their lunch would be out shortly. The kitchen got it out pretty quickly after that. Anna had one more issue with forgetting to put in a pancake as a starter for a guest, and it came out at the end. They were once again very nice, but I felt it was only fair to take care of that item. I will take time the next time we work to be certain she is organized, and is writing down all of her order, and then repeating it back to the guest will also help. 

Alejandra had a table that seemed surprised that they got a bill for the food they ordered, since they were staying with us. It wasn't a situation where they asked to talk to a manager or anything like that, so we were surprised to find out later that they told the front desk, that the restaurant offered a credit for their food, which did not actually happen. We are certain that Naomi and I both tell each guest upon arrival the complimentary Euro Breakfast, and that other items can be purchased/ ordered from the table. It might be good to implement that for each server to let the guest know as well.
