Ran with two servers- Alfonso and Angela. Jerry trained with Angela. Next time he trains I want him to take some tables and be shadowed. He's doing really well. I told him to study up on the cocktails, food, and wines by the glass.

D'ete was out sick so it was just Collin and Grayson in the Snug/Lobby which was totally fine as it was DEAD. Grayson did some stocking and batching.

We need vanilla paste for the bar. We also desperately need buffing rags for IRD. Lauren gave me a list for bars of: 10-15 fine strainers, 8-10 cheese peelers (same as the one that is currently at Condor Bar). She also said that we are INCREDIBLY low on glassware of ALL sorts. She said that it is a constant shuffle of stealing glasses from one bar or another to make drinks, especially on busy nights. She said that 90% or what IRD is doing is dealing with the glassware shortage. I'm a bit worried about the martini bar for the buyout... not sure if we have enough coups or if we might need to rent some?? I would discuss with Lauren tomorrow and maybe go over the whole set up of the martini station with her to make sure we have everything we need for it.

I printed new wine menus with the Land of Saints replacing the Habit and some other minor changes. I still need to make new buttons in micros or just replace Habit with the Land of Saints (as it's the same price). We can do it together Friday but for now they can just use the Habit button. Sorry- I still need to get myself sorted on the button front!

I also took the Fireside Daiquiri off the menu. We'll get Lauren's new Daiquiri up and running next week. I talked to also replacing the Chief's Peak with a more spirit forward cocktail. I can spearhead a bar meeting + training with Lauren and team next week and get it all ironed out.

I did not print new food menus for tomorrow as Chef Brandon told me he is planning on replacing the Tomato and Pear salad with a Tomato and Stacciatella salad, but he didn't tell me when it was happening. I don't think it will be for tomorrow, but check in with him or Octavio before you print more dinner menus;)

Oh, I left you a printed agenda for tomorrow's meeting and a bunch of copies of the Condor Dinner sequence of Service as well as some Snug sequence of service copies to pass out.
