2/28/26 AM NOTES
Euro Breakfast was very busy due to the buyout. Large scale buffet was really smart. We did get busy with the guests by 8:15, and so at that point we only had Paco and Eve on the floor. Most staff arrive at the 8:30 mark. Anna arrived late, which disrupted the service from being smooth, we were playing catch up. We actually got a little behind on the buffet as well, and the quiche and hard boiled were wiped out, which is a 20 minute turn around if we don't have any ready right away. So unfortunately, there was a delay in those items, and guests were asking for them, even if we took the signs away. We let them know when they were ready we would bring those items to their table. I did discuss with pastry to prepare more of these items earlier in the day, so we're not scrambling. They were good to prep more quiche, and eggs for Sunday.
At lunch we saw some outside tables beyond the buyout, but a lot of tables were guests from the buyout as well. We had a pretty large group of guests from the buyout at the pool, including Jeremy. Jeremy asked about bringing glass to the pool. since they got a bottle of cava to share, and I let Claire know that we can't have a glass bottle out there, but we can pour the bottle in their glasses, and how many glasses do they need. I didn't realize at the time that it was Jeremy. Once I saw Jeremy later, he asked about glass at the pool, and asked about having it in the pool storage room, I said that would work, and he mentioned getting ready with drinks etc for the pool from here on out. I mentioned it to Riley, and she already has a plan in motion.
We finished up the day later than expected, we had tables that were taking their time, and we needed to move the tables for the event, it all worked out in the end.
Onc comped salad that took too long and then it was missing the fish that was added to the salad. The guest was fine, but it seemed best to take care of their salad. Another salad also took awhile, and also was missing the protein, but it was caught before the salad went out. That guest was very nice, and connected to Sydney who was serving them, so I didn't feel like we needed to comp the second salad, but it's something to keep an eye on.
