3/13/26 AM NOTES
Steady European for most of the morning. With a little lull between breakfast and lunch.
We were considering sending Rolo home around 12:30, but decided to keep him until at least 1 and I'm glad we did, because we got busy shortly after.
We had about 40 covers.
I adjusted the pool in time, and asked Paco to come in at 11, and stay until 6, with a break as well. David did the same thing, and it seemed to help with the pool rush that comes between 4 and 5. This might be the adjustment needed until we have two pool servers scheduled on the weekends. Paco definitely had plenty of business during those hours today.
I had Paco offer bocadillos from 3-5, since the kitchen had the new Condor menu launching today. It seemed to work fine, most guests got guacamole. It would probably be good to sit down with Octavio and Will to look at the pool offerings and see what menu will work best for those off hours.
Sierra from housekeeping told me that the pool was left very dirty yesterday, and she had a lot to do, including getting a towel out of the pool. She said she's happy to help, but housekeeping was short staffed yesterday already. I just wanted to make sure today that Paco is leaving it in good shape, with dirty towels put in the bin, and new towels on the lounge chairs, I had David go out and assist as well.
Brandon mentioned to me today that he was going to have another conversation with HR, and that he may not have much time left here. I tried to get more information from him, but he said he preferred to keep it confidential, and only speak with HR. Nothing in particular happened today that would trigger a response like that, but we did get paid today, and maybe that could be part of the frustration. He did have some photos he shared with me with people leaving things from the night crew left behind dirty. I let him know it might be best to show Riley since she may have a little bit say on how we can improve those things.
Stayed a little later to see if the pool was okay, and the 6 o'clock timing worked, there were no guests when we left at the pool, and we were able to leave it in good shape. Unfortunately, there was a misunderstanding between a guest and Paco. He gave her the bocadillo menu at around 4:30, and she said she didn't want anything off that menu, and so he thought she was fine without anything. Well. at around 5:30 he came up to tell me she really wanted the mediterranean salad, and I told him it would be really difficult to make that happen at this point, and would have had better luck getting it at 4:30. I asked Brandon anyway, and he offered a beet aguachile on the house. When I went to offer it, she said she had been waiting for her salad for an hour. I told her there must be some sort of misunderstanding because we don't have anyway to make it happen as that salad stops being served at 3 pm. She said there had been a lot of misunderstandings today, and the experience hasn't been great at the pool. She said she can't blame the server though because he's alone, and the pool was slammed. So.. I of course apologized, and let her know that he definitely has help, the bartender, etc. But, I took full responsibility for him not being able to keep up, and I should have checked on him more often. I did ask him later to please let me know if he needs anything, so we don't get in a place like that again. The guest had two and I took care of them.
Comps- 2 matchas, 1 mediterranean salad (the guest didn't realize it had feta) we fired a new one.
