3/13/26 AM NOTES

 Steady European for most of the morning.  With a little lull between breakfast and lunch.  We were considering sending Rolo home around 12:30, but decided to keep him until at least 1 and I'm glad we did, because we got busy shortly after.  We had about 40 covers.  I adjusted the pool in time, and asked Paco to come in at 11, and stay until 6, with a break as well. David did the same thing, and it seemed to help with the pool rush that comes between 4 and 5. This might be the adjustment needed until we have two pool servers scheduled on the weekends. Paco definitely had plenty of business during those hours today.  I had Paco offer bocadillos from 3-5, since the kitchen had the new Condor menu launching today. It seemed to work fine, most guests got guacamole. 3/9/26 AM NOTES

 Steady Euro breakfast, with most guests coming at 9.  Lunch was a bit steady, we also had a decent amount of guests at the pool. So between the two, it did feel a little bit busy.  The kitchen was slow to get a few tickets out, and Luis who is pretty new says he wasn't properly trained, so he doesn't know the items well, and that might have been the issue.  Jaylynn let me know that they were out of fish tacos for about 20-30 minutes, as they needed to make new batter for them, I didn't get a chance to let Maureen know, and she ordered one about 5 minutes later, I let the guest know that it could take longer than usual, and if they wanted another item, or if they were okay to wait, they decided to wait, and I brought a guacamole out on us. The food came out at almost 50 minutes later, Maureen ran out the rest of the ticket, so I thought they had it all, I realized after the fact that the tacos were still missing, they were ready at that point though, and I brought th...

3/8/26 COCINA NOTES

 Euro breakfast got a bit of a hit towards the end of breakfast at 9, I do believe it's because of the time change, everyone was about an hour behind. So, we filled up all at once, we were pretty sure that was going to happen so the buffet was replenished, and the staff did a good job keeping up with their tables even though they got sat at once.  We did have a lady come up to me to say that their food was taking a half hour, and they had somewhere to be, she said if it wasn't coming soon that they would just eat items off the buffet. When I went to the kitchen the food was ready so I ran it right away, they seemed better once it was dropped, although I needed to get the salt and pepper and it took a moment as all of the ones we usually use were out. Eve said the lady came to her as well, and said they were waiting for their food now 45 minutes, I let Eve know that they had their food now, and I had already spoken to the woman. 3/7/26 AM NOTES

 Very busy European breakfast with the hotel being at 96%, but it went smoothly, and the team did a good job helping keeping things replenished.  Claire called out again, so Paco worked at the pool. Our morning staff all took breaks, so we could keep staffing on a bit later, Paco worked almost 10 hours though, because the pool stayed busy until 5. He was extremely busy all day, and with nicer weather, and the hotel being sold out, we should anticipate the pool being busy all weekend from here on out. Riley and I discussed plans, and hopefully we can implement them soon.  The pool needs sunscreen though, I will look into it with Riley, and we need to get a printer out there soon, before the busy season comes upon us.  Since we lost Paco to the pool we had two servers on the floor, but a third could have been helpful, as we were full outside, and pretty full in the main dining room as well. 3/6/26 AM NOTES

 European breakfast was fine, not terribly busy.  Anna stayed until 1:30 or so, Claire called out for the pool, Zammy and Sydney held it down though. Zammy took a few tables on the patio, and Sydney took the rest, Zammy helped out at the pool. We didn't have too many pool guests.  I held on to both Sydney and Zammy until we closed, because Cocina had a busy day Thursday. There was the Ojai Food & Wine Festival this weekend so with more people in town we thought it could also get busy, but it did not pan out.  We had a nicoise salad returned, as the guest meant to order the mediterranean salad, we got the guests the correct salad.  Cocina sales- $1430.50

3/3/26 AM NOTES

I arrived at 8, and Rolo had just a couple of guests. He opened solo because Zammy was scheduled, and said he wasn't available because of his other job. I let him know that to please let Riley know soon after the schedule is out, if he can't work to let her know. If I didn't reach out to him to stay because Maureen needed coverage, he would have been a no call no show. Ultimately Sydney came in for Maureen, and just came in at 9 am instead of 10:30. It was perfect timing, because it did pick up and Rolo had to focus making speciality coffees. Rolo broke around 11, and Sydney and Jean were good until he got back, they got a few tables, and some action at the pool, I tried to cut Rolo at 1:30 maybe, and then we got another little hit, and we kept him on until about 2:15. Sydney left right around 3, and I finished up her paperwork etc, so she wouldn't go over 6 hours. 3.1.26 PM NOTES

 Started with 25 Covers. Ended with 68.  Keegan was out sick again, but I expect her back tomorrow. Lauren banged out the inventory in Condor and did a bunch of stocking. Erick and Jean got the inventory started in Snug and I will have someone finish it up tomorrow. We had a bit of a pop in the lobby following the Ojai Music Festival but nothing that couldn't be handled by 1 Lobby server.   Smooth night overall.

3/2/26 AM NOTES

 I came in at 8, and Rolo only had a couple of tables, the hotel was pretty quiet at 17 guests. He and Eve handled it while I did inventory with David in Mariposa. I came to check in about 10:30 and help close down the buffet, and there were 6 or 7 tables. So, I helped out a bit, and continued inventory once we closed Cocina for the day.  Rolo left around 1:30 as he had a dentist appointment, Maureen was great, but definitely needed support from David and myself. We also had some guests at the pool, and one in the lobby. We also had Daniel join us for lunch, and then another meeting, all was good.  We ended up closing a few minutes early because there was an accident with the gardner, and the water was off. We had to shut down service and food, but we were able to get the last few items out.  Water came back on probably a half hour later.  No voids or comps today Cocina sales- $1542

3/1/26 AM NOTES

It was the buyout on the last day, and a lot came to Euro breakfast, so I'm glad we did the large format again. We were ahead of it compared to Saturday, but there wasn't as many guests, and they weren't sitting and visiting as much, so they did not go through the buffet as quickly.   We had only one server scheduled for Sunday for the morning, and Riley asked Alejandra to come in which was great, and I asked Sydney to come in early, and it was too late to adjust with Sydney, so I just kept it, and I would say it was too much staff on before 10:30. We were able to break easily, so that was good, and I had Alejandra leave around 11:30 or so. I think I wanted to be safe rather than sorry, since we were behind the day before.  The pool was a little steady, and Paco does a good job out there. He was able to leave right around 4:15, so no late guests at the pool.  We needed to get Anna off the floor, since her other job started at 4, she left pretty close to 3.  Sydn...

2/28/26 AM NOTES

 Euro Breakfast was very busy due to the buyout. Large scale buffet was really smart. We did get busy with the guests by 8:15, and so at that point we only had Paco and Eve on the floor. Most staff arrive at the 8:30 mark. Anna arrived late, which disrupted the service from being smooth, we were playing catch up. We actually got a little behind on the buffet as well, and the quiche and hard boiled were wiped out, which is a 20 minute turn around if we don't have any ready right away. So unfortunately, there was a delay in those items, and guests were asking for them, even if we took the signs away. We let them know when they were ready we would bring those items to their table. I did discuss with pastry to prepare more of these items earlier in the day, so we're not scrambling. They were good to prep more quiche, and eggs for Sunday.  At lunch we saw some outside tables beyond the buyout, but a lot of tables were guests from the buyout as well.  We had a pretty large grou...
