11/30/25 AM SHIFT NOTES

 41 guests at European Breakfast, they trickled in most of the morning, then we got a pretty big hit at 9:45 with Lauren Dern, and a lot of her other guests that stayed at the hotel. They were at different tables, her table had 8, but she was moving around chatting with other guests. We kept up the breakfast station until 10:20 or so.  We had some food issues today, one was plastic in some over hard / omelette eggs, which we replaced, although the guest was on the fence about having them remake it. She seemed fine with her replacement, and was super excited that Laura Dern was sitting across the way from her. She told me she's been in Big Little Lies, and Jurassic Park, it was cute to see how excited she was, but also distracted her about the original problem. I let Chef Robert know about the situation, the plastic was the edge of a deli cup.  At lunch we had an overcooked burger, and I asked the guest if they would like it redone, and she said no I just don't want to pay...

11/30 NOTE TO FILE FOR PETER KELLEY

 Peter Kelley needs to be called in for a written warning, we attempted to have an in-person discussion today, but Peter left without communication to MOD. Kristy and myself were prepared with the "Rules of Conduct" printed out to discuss the three areas of concern regarding Peter Kelley.  1) Insubordination, refusal, failure or inability to comply with reasonable instructions of supervisor or managers 2) Refusal to comply with company rules, policies or proceedures, including failure to cooperate in a company investigation  3) Poor job performance, includijng unsatisfactory attitude that detracts from job performance or efficent operation of the company The resaon for sighting these "Rules of Conduct" is due to the following:  Peter has over the past few shifts been dismissive or insubordinant to his direct Supervisors requests to do the work of busser. Condor + Snug 11.29.25

 130 Covers  We had a five server floor tonight which felt like 1 too many. Everyone did a good job running food and guests were happy. Satia had a check she was unable to close. I had her transfer it to me. Maybe Jess and I can get to the bottom of that check as well as the check that Breanna couldn't close earlier in the week.  I will be here tomorrow to go over tip stuff and UKG clock in stuff.  See you then, Sarah

11/29/25 AM NOTES

 Started off quiet for European Breakfast, and picked up soon after Anna arrived at 7:30. Sydney arrived at 8:30 and we had a good rhythm going with the two servers on, and Amanda on the host stand (she did amazing, and is typically at the Condor) pacing the tables was great.  I reached out to Peter earlier in the morning to see if he could break and stay longer, since I could see that I would be down to 1 server by 2:30. He agreed and it was good to have an extra hands on the floor. Amanda also agreed, and broke as well so she could stay until 4.  I know we need to put out times on the schedule, but the 5 hour out times, if the server is not aware that they be needed longer is also difficult, because I run into people telling me they can't stay, or they have plans already. If we could at least schedule them for the full 6, it could be better?? Condor FOH 11.28.25

140 covers not counting the bar, which was full most of the night We ran with 4 servers (because Emma was out sick). Everyone did a great job- stayed focused and finished strong. Having Amanda at the host stand on Friday and Saturday nights moving forward feels absolutely crucial. With her at the host stand I can check in with guests, support servers on the floor, and help get food out to tables in a timely manner. If it is any of our other hosts manning the front, I am tethered to the host stand and unable to do much else. Amanda has also expressed that she would much prefer working at Condor to working in Cocina.  Luc batched, worked service bar in Cocina, and gave support to both the lobby (which was really busy) as well as Condor. Thanks Luc! Laura Dern added 7 people to her party last minute and we were able to accommodate. 11/27/25 AM NOTES THANKSGIVING

 Hi all, I was behind on putting these notes in.  It was a steady day, we closed at 12, but had a few tables, the most notable thing was a guest staying with us had a strange interaction with Lynne in the Condor Bar the everning of the 26th, and was going to have dinner in the Condor and left because she was uncomfortable.  We accommodated her in Cocina, but I still felt bad that she felt rushed, and guilty for leaving us open forher  to have food. She was reassured that we were in no rush, and we had plenty to do to clean up, and get out, so to take her time. Anna had a good connection with her, and I know Shelby was going to reach out again. She left Anna a very large tip, I think once again because she felt like she was be an inconvenience. The pool was pretty steady, and Zammy felt overwhelmed for a moment, because we only had the Condor thanksgiving menu to offer, we talked it through a little more and he was fine. I just had to let him know this was the only me...

11/28/25 AM NOTES

 Extremely busy day today, it took a bit for the European Breakfast busy, it happened around 8:30, and Mia was 30 minutes late, her child's day care was closed, and she had to find an alternative sitter. Once she arrived she asked me if I received her message, and I informed her I was too busy to see any messages on my phone. I told her all I needed at the moment was busser help, and to start taking new tables. I would say between 9:15 and 9:30 we got totally packed with only one server, and myself and the barista. We were also trying to keep on the breakfast station as well as the coffee station. It was a little too much, and I went to the front desk and said we have a 911, and if they could help. Zach held up the front desk, and all the others came to assist. Steven, Evelyn, and Shelby were absolutely AMAZING! Cleaning tables, resetting, running food, making green juice, I couldn't ask for a better team to get us through.  We then had a little lull after the European Breakfa...

Thursday / Thanksgiving 11/27/25

  Condor:   152 covers Thanksgiving Menu was well received. Some latency issues on expo and running, the amount of plates and courses was higher than regular service, took some oversight getting enough hands from kitchen to table. Service and customer feedback was all positive. Lots of campers in both outlets, as to be expected on a holiday. Lynne was told to leave early, not feeling well. She has since reported being quite sick, she will be out tomorrow, Saturday is unknown. Chad is coming in tomorrow for her. Lauren was struggling a bit tonight, I covered bar a couple times for her. She is not feeling well either. She will report back on how she feels in the morning. She covid tested when she got home, came up negative. Snug/Lobby:  Smooth service. Sydney and Grayson held it down, mostly seated throughout the afternoon/evening but not high volume. Chad relieved Grayson for the evening. We were without lobby server after 7:30 I filled in on bar and lobby service...

Condor/Snug 11/26/25

  Condor: 145 covers   Busy early push, numerous big parties. Service quite smooth with 5 server floor, Jerry in Expo, Eduardo bussing.  Alana at host stand needed some support a few times tonight. There were a couple parties claiming to have  A reservation, but not in Resy. We worked it out, all were accommodated. Had to step in to deescalate a belligerent guest who was yelling loudly at Alana, upset that his table (31) was too close to the outside and it was too cold. Refusing another table inside, he insisted on being sat on the patio. We made it happen. It was warm enough to seat the 300's until about 7:30 which was helpful. Not a lot of overflow from the movie across the street.  Feedback from guests was all positive. I had no returns or complaints on food or beverage. Snug/Lobby: Mostly full from 5-9, kept Ruben in Cocina for service well to D’ete/obby, he agreed to break and stay an extra couple hours. Grayson essentially making drinks + running exp...

Condor Bar + Snug 11.25.25

 119 Covers It was busy and overall a smooth night. Amanda did a good job as host. There were a couple of things sent back that guests did not like, but aside from that just some server errors/voids. Lauren came to tell me that some guests at the restaurant had walked over to the Snug and asked her to make their drinks as they did not like the drinks that were coming out of the bar at Condor. Lauren said that this is not the first time that this has happened. I comped their drinks and apologized. They left happy, but we should try to figure out what is happening with cocktails/consistency.  Eric had to leave abruptly as he was sick and had a fever. Lynne said that he was coughing from the moment he arrived and got progressively worse.  At the end of the night Breanna was unable to close a check. Every time she tried to adjust the tip it came back saying the sum did not match the total. We tried everything we knew to try with help from both Riley and Keegan. I had Breanna ...

11/24 FOH & BOH NOTES

 Riley, can you email Chad and Brooke tomorrow to check in on if we can get a run down on cash boxes and protocol.  Questions, what happens if we are short, Kristy had a $5 bank shortage, how do we log or report to get whole.  Are we supposed to be counting our boxes down to $1,000 weekly?  What do we do if we need petty cash for something like a grocery store run?  Also check with Chad on Sarah's box please its 15 but the key was messed up.  Emails seem to be funky, bummer we are doing these microsoft updates over the holiday week, but some of your emails may not be working. Check in with Meredith and she can get you to the right people, there were people in house today and Vanessa learned a lot too, she is probably a good resource.  Tip Sheets and Tip Convo today, should have answers about making some adjustments that get host a little more and maybe shift IRD to their own pool by end of week, please don't talk about it yet but we are working on it....

11/24/25 PM Snug/Condor

 113 covers Busy night in condor. 4 ten tops. One being Ramin. Others were parties that had two reservations booked, and wanted to merge. We were aware of one of them, Jess had connected with her before service. The other two were ones taken by front desk after service started. I asked front desk to please check in. I will talk with Hailey about this.  FOH team was for the most part good, but Riley had a table that waited about an hour for their entrees, kitchen lost their ticket, and we ended up comping their whole tab ($400). I should have noticed, Riley could have noticed. Fail amongst a few outlets.  Jean did not do great, Jess had to help him out of a hole tonight. I was under the impression he was a really strong bartender, but he needs some counseling.  One table complained to Amanda that the food took to long, I had checked with the table multiple times before the complaint, so I was surprised, but when I talked to them after their complaint, they said everyt...

11/24/25 AM Shift Notes

 Busy European Breakfast again this morning. Stayed busy until a little after 10, died down after. I cut Paco at 10:45, but he stayed on the floor untul almost 12, so Jess and I had a small discussion about getting off the floor in a more timely manner, trying to do sidework and tip sheets, etc within 30 minutes. He seemed to understand, I will make a note of the discussion in UKG.  Rolo and Jazzlyn were on after, but I cut Rolo at 12:15 or so, as Ruben felt comfortable helping Jazz if she got busy, they had a few tables including Ramin for lunch.  I gave Ramin a discounted bill, and put the remainder on his house account. I let Ramin know, and he said okay is that the new procedure. I want to confirm with Warner if that is definitely the correct procedure.  I cut Jazz at 2 pm. and Ruben had another table, a couple of guests at the bar, and a couple of orders at the pool. 11/23/25 Sunday Condor/Snug

63 on the books. Busy out the gate, died significantly after 7:30, as per Sundays. Christopher Banks (Housekeeping) and family came for dinner and had a great time. Hillary Duff was in, as well as some friends of Chef. Service was smooth. Erick (bartender) trained on Expo. He also expressed a lot of interest in Cocina bartending shifts, which is good if Ruben moves on to HR. He also only has 1 shift this week, in an event this weekend. I would like to squeeze him in somewhere over Thanksgiving if possible. Amanda did great on host again. If we decide to have a defined anchor host role, or lead host, she'd make a great fit.  D'ete was prickly about tipout percentages tonight. She feels like she should get more than the bartenders. I just listened.  Airpots for Cider and Hot Chocolate service in lobby were tested and are ready to go through the holidays. They'll be stationed in La Cocina Kitchen, and Lobby servers can self serve and garnish. This will require a bartender or M...

11/23 AM Shift Notes

 Very busy for European Breakfast with so many guests checking out, we had 51 join us. It was a good steady pace, but really picked up by 9:15 or so, and it was a bit difficult to keep up with replenishing food, and at one point coffee. A few guests were waiting on coffee, and they were nice and patient. The bakery helped us replenish as well, which is always appreciated.  We had a little pop also at 11 am, which was nice as well, everyone sat outside since it was a nice day.  Paco was helping at the pool, and a few guests already by 10:30, and since we were busy most of the day so far, I asked if he could break and stay a little longer for the day, he agreed, but then by 2 not much more happened out in the pool, so we let him and Zammy go home as well.  It was a bit quiet later in the day, so we went down to Sydney, and Rueben.  Feedback from food was great.  There was a bee nest under one of the pool lounges, and a beekeeper was called in to remove them, ...

11/23/25 General FOH & BOH Notes

 Luc - A few questions re: holiday menu, is it worth doing a limited 3 speciality drinks menu next week with the holdiay?  Do we have a batching plan we can help support, I think batching for Wed - Sat would be good.  Do we have a plan for who is making Hot Chocolate after the barista leaves? If this is the old LD LA receipe its a bit time consuming and coffees even at night really slow down the team. I am concerned about the amount of Snug bar cocoa? Also do we have electric hot water pitchers we can keep in the bar for toddy's?  All FOH managers I adjusted the back end of Resy for turn times. I am not sure why but it was set for 1.15 hours for 2 tops and 1.5 hours for all parties 5 or less. Now we are at 1.45 for 2 tops and 2 hours for all others.  Please revisist properly marking the tables for dessert. We should mark each seat with a spoon, I have noticed a trend where the servers are puttting stacked spoons on a plate in the center of the table.  Can w...

11/22/25 Saturday shift notes Condor Bar

 106 Covers  Went with a four server floor tonight. Amanda at the host stand with Sarah. Jess was on the Floor and Luc was on the Lobby and bars.  We had the F&B Director from the Biltmore in on table 23. Emma was their server and they were so happy with her that they tried to poach her for a restaurant in Montecito.  Amanda did a great job and took direction well. We discussed having hosts focus on keeping the kitchen updated every half hour with cover count and communicating all notes regarding guests, especially allergies both to the server as well as the MOD.  Jess and Luc had a conversation with Alfonso in the office regarding his inability to accept direction or outside help.  Lauren Kruse (bartender) is working on Thanksgiving and would like to make a reservation for her family to come in. She would ideally like for them to come in sometime between 2-2:30 but said if that wasn't possible she would be happy to have them come in earlier. Luc and I ...

11/21/25 FOH PM

133 Covers. F&B Net Sales 14,762.20. Busy opening, lobby full for most of the early/mid evening (Libby Bowl Event). Fizzled out around 9:00. Service was smooth, positive feedback from guests, minus one sea bass returned, customer complained it was overcooked. Alfonso struggled a bit during the push, Angela and Emma stepped in to help. He generally will not ask for help. When asked to speak post shift by Jess, he scoffed and said he was "Off the clock" and left. Smooth sailing otherwise. Sarah trained again on floor and expo. Riley did great in the lobby, as always. Staff and management are becoming more comfortable and familiar with the new tip sheets, and they appreciate the transparency. A few double rings in lobby, minimal micros errors. The Taschen reservation went well. Eric Goode and Jeremy's table went well.

11/21/25 FOH MID

 Went to 9 am meeting, discussed Phones. Meredith is looking into getting us 2 handhelds so the FOH manager can always have a phone on them. The Mid will eventually come in and return all calls for parties over 6.  PAYCHECKS FOR LIVE CHECKS bottom file cabinet to right of Apple computer, front file.  Lets start having the Host come to the office at 4:30 and confirm all parties 6 or more for the next day. If we can attempt to start this on Monday that would be ideal.  A few menus back for next week from Kirsten, I will come in tomorrow to sort them and print. I will put them in the file folders on the wall by the printer. BOH & Luc, please review for planning, batching, prep etc.  Tip sheets going well, gonna get us binders for each tip pool tomorrow so we start to print nightly or next day and put in the file folder. Will also adjust all pools to "Old" pool tomorrow. Pool adjustment will happen next pay period, can discuss more if needed. This only impacts F...

 55 covers Condor Net: $4,046.70 Snug Net: $1,281.00 Cocina Net: $1,105.80 **UKG NOT WORKING FOR PUNCH OUTS, ALL EMPLOYEES WROTE DOWN PUNCH OUTS AND PUT IN BLACK MAILBOX BENEATH TIME CLOCK*** Patio closed due to rain, lobby was mostly quiet, with a few groups throughout the night.  Erick completed all batching and restocking. I would like to see what tip pool the mid will be pulling from, as they are doing a lot of behind the scenes work, which is very helpful for service, but I want to make sure we approach this correctly.  We had a guest at the bar complain that his lobster was undercooked. I talked with him, and wanted to offer him something to make him and his guest happy (he wasn't unhappy, just not thrilled as he is a regular/local and loved everything else-tonight his tab was 300+ for two guests). 60 covers Snug Net: $2,801.50 Condor Net: $2,894.25 Slow start-steady night overall in condor and Lobby. Not many seated on patio. 6 top turned into a ten top, and then they decided to eat in the lobby and chill there. Satia did great. Confirmed with Will that that was fine prior to them ordering. All was good.  Credit card machines are starting to run pretty slow, intermittently.  Grayson did a tasting with Laura Dern in the snug at 5pm. Chad broke Grayson at 5:30, Laura Dern wanted to taste red wines (both BTB) I okayed it with Chad.  Few questions surrounding holiday pay- barbara sent me handbook.  Overall slow night. Cut Keegan so we just ran with two. Way too cold to sit any patio.  Meredith came by and instructed me to have the fire place still on and we double stacked the cushions on the bench of 201-204, just for it to look nicer. Looked much more inviting, even if we weren't seating. I appreciated her counsel on this.  Angela went home around 715. I should have had her break Riley, but I wasn't expecting us to get a late "rush" of a few tables.  Chad broke Lauren, it was slow enough, but for the future, I am not sure how we will be breaking one bartender in snug if they work open-close. I think building in that mid will solve for this issue.  Manager from Playhouse came over to discuss Marisa Tomei and Ethan Hawke coming over. I guess he had a bad ending at playhouse with crazy fans. She wanted to make sure I had a private spot for them. Ethan walked in and decided on Condor. Their visit went well, gave them friends and family discount per Meredith....
