12.28.25 PM NOTES

 135 Covers It was another busy one and we were short staffed, but everyone pulled together and did a great job. Chad really rose to the occasion moving between Snug and Condor and Erick held down a super busy bar in Condor for the most part on his own. Keegan came in to help and was our fourth server. She was not feeling well and her condition worsened throughout the night. We got her out of here as early as possible. Emma was good to take over her secion. Luckily, Keegan is not scheduled tomorrow or for the next couple of days. Great reviews from Joshua Saidoff's 10 top. They pulled me aside to say how good both the food and service were. They will be recommending to their friends. Riley and I discussed that we need to sit down to talk with Kirsten what the verbiage is with regards to booking large parties in Condor as people seem confused. 12/28/25 AM SHIFT NOTES

 Steady European Breakfast with at least 50 guests, plus a few reservateions fro breakfast. Started being busy right at 7.  Paco came in at 8:30, and took section 1, Anna on section 2, both had a good amount of guests, Paco got 3-4 tables within a 15-20 minute period, and got behind at one point, he forgot to put an order in for one table, they were very nice, and gave them a few items on the European Breakfast to hold them over. The other table was a 5 top, and had to ask to have their order taken. He said the coffee's put him behind, but I let him know that he can always move ahead with an order, and let the guest know that coffee 's will be out soon. It ended up being fine, but it would have been better to have quicker, and more efficient service.  Anna got cut at 10:30, when Sydney arrived, but she was finishing up tables, and doing sidework, and ended up leaving about 11:30.  Paco and Sydney were pretty steady the rest of the day, Sydney was also checking in wit...

12.27.25 PM NOTES

 168 Covers It was a beast. Lobby was bursting at the seams... almost to a point of potential fire hazard. We really needed a second lobby server and a busser.  Had a hard time getting people to sit outside and/or on table 23. We did, however, seat the 300s. The heaters are strong out there and people were warm. There were multiple comps and voids. Swordfish dip hit the table cold. Guac dragged. Sea Bass dragged. Drinks dragged.  Overall tho, it felt like customers left happy. Sonos can still only be operated via the Front Dest ipad... Corinne E was IRD and informed me at almost 11pm that she hadn't taken a break, which is very unlike her. When I asked her why, she said that the am IRD (Brandon Beebe) had left a huge mess of things to polish and that she was just too busy. I asked her to let the MOD know anytime she felt like she couldn't take a break in the future. Joanna struggled with hosting tonight. She's not ready to go solo on busy nights. She needs more training. ...

12/27/25 AM SHIFT NOTES

Euroopean Breakfast was busy with the hotel being almost 90%. Alejandroa and Anna both arrived at 7:30, with the thought that Alejandra would train for the day, since she hasn't been back in 3 months, since her accident. Zammy called out sick though at 8, so I had her take the back section. She did a great job! Sundji arrived at 9, and is an awesome addition to the team, he was great to check in on the pool, and the lounge as well.  I cut Anna and Alejandra at 11, after we had a quick pre shift, and Paco and Sydney were in their sections. We had a little lull, after 11:30 until about 12, but there was a small rush at the pool. Paco focused on the pool, and Sydney took the floor, about the time she got busy, around 1 or so, Paco wasn't as busy at the pool, and came to relieve Sydney a little bit.  Sundji went home at 2, which was fine. 12/26/25 AM NOTES

 Busy European Breakfast, as well as a few walk-ins for breakfast.  Rebecca in for the early shift, with MIa coming in at 8:30. I had Mia break before Rebecca left, so that we could hold on to her until 3:30.  Paco came in at 10:30, at that point we went down to 2 servers. Mia in the front, checking in with the lobby. Paco in the back, We were pretty steady at lunch, and just one table in the lobby for a long time.  I went to the meeting for the upcoming buyout, and I told Mia to stay through, until I got back. It got busy in the lobby around 3, and Lauren was on her own, Mia helped a bit, but needed to be off by 3:30.  Luc and I assisted with the lobby, until Lauren got caught up, she was fine after 3:30, and a server was arrivng at 4.  For lunch we had 53 covers.  La Cocina sales- $2731.85

12/26/25 Condor/Snug

 Condor: Started with 116 on the books. Finished with 135. Busy on the front end. All reservations were from 5-8. Had an order of oysters returned, table said they tasted off. (I sampled one later on it seemed fine.) All other guest feedback I received was positive. Bar was full most of the night. A lot of out of towners in for the holidays. Satia complained that Claire was not helping with sidework and couldn't find her. She does disappear on occasion. Most IRD are usually easy to find, she does disappear at times. Will need to have a chat with her that if she needs to step off for some reason she must communicate with MOD. She also routinely leaves without notifying MOD, which she did tonight.  Snug: Lobby was full from the late afternoon into the evening. Kept Cocina well active and put Collin in from 6-8pm. Corinn rang tickets to Cocina. Worked for a while but Corinn is not as fast as Riley or D'ete. Ended up moving Collin back to Snug and cut Lauren. I closed down Cocina ...

12/25/25 Condor/Snug

Condor: Slow in the beginning, not many tables 2-4pm. The bulk of reservations were 4-6pm. Heavy comps from large parties of Ramin, Warner, Brandon, and Octavio's family. A couple swordfish dips were returned, and have had a few sent back earlier this week. Majority of the complaints are that it's too cold. Most people love it, just noticed it this past week. The holiday menu was well received, and service was smooth. Nearly impossible to seat outside with the torrential downpour, only had one reservation at 6:30 had to wait a few minutes for an open inside table. They've been in all week and were very nice and understanding, comped a round of drinks. Ran holiday hot drinks and eggnog in all outlets.  Snug: Decent flow of walk-ins in the afternoon. Got up to about 80% capacity once or twice. D'ete was two hours late, she apparently got stranded by a downed tree. I swapped Lauren from Condor with Jean from Snug when he arrived, she helped serve lobby until D'ete arri...

12/25/25 AM NOTES

Decently busy with European Breakfast, and a handful of walk-ins. Stayed steady until 11 am.  At 11, I broke Sandji and Anna, so they could stay on a little longer. Once Anna came back from break, I had her focus on the lobby, and she agreed to stay on until De'te arrived at 3:30, she got a nice rush between 12:30-2, and it cleared out a bit once Condar opened.  I sent Rolo home at 12, since Paco could take any new tables, and would have support from Sandji and Ruben. It never got too busy, we had maybe 4 tables at a time max.  I would say a few guests came in, but were interested in a lunch menu, so maybe consider serving lunch next year? We did set up charcuterie and cheese, and cookies in the lobby, and guests seemed to enjoy that touch. Anna and I helped keep the area stocked, cookies ran out around 1 or so, and they removed the station once Condar opened.  1 iced tea voided as a double ring La Cocina sales- $1789.52  

12.24.25 PM NOTES

 91 Covers The 1 large party that we had tonight >>> Lauri Dawson, who was a "handle with care" situation, proved to be challenging. For starters, her party was confused by the pre set menu. They were under the impression that it was seated out and everyone got to choose their own entree. I explained that is was going to be family style. They then said that only two people at the table ate meat and that it was mostly vegetarian. I worked with Octavio to adjust the menu. Towards dessert I cut Breanna and Satia took their table. Satia came up to me not long after taking the table and told me that they wanted to speak to a manager. One of the men at the table was furious. He said that Satia had been rude both to their face and also said something snide under her breath as she walked away. I literally thought he was gonna blow a casket as he was red in the face and yelling. He went on and on about being a local, about how often they come here (and bring other people here...

12/23/25 AM NOTES

 Steady European Breakfast, with 54 guests, they trickled in from early in the morning. So, not too many at one time.  We had a couple of reservations off menu in the morning around 10, which was nice. I communicated to the kitchen, as well as letting them know we had two groups for lunch as well, 7 top at 12, and a 10 top at 12:30. The kitchen did a great job getting items out in a timely manner.  We had a lot of walk-ins as well for lunch, and ended with 59 covers for the day, for lunch.  We had a little bit of traffic in the lobby as well, nothing at the pool, since rain was on it's way.  Rolo left around 12, Mia stayed passed her 6th hour, I wish I thought to break her earlier, but she took a large group at 10, and then next one at 12:30, and we were restocking and doing roll ups during the down time. 12.23.25 Condor/Snug

 Condor: 66 on the books. Finished with 81. Smooth service despite the limited inside seating due to the forecast. Joehana trained at host stand and Margie behind bar. Both did well. Thinned out quickly after 7:30, most FOH staff out by 8:30. One complaint on the swordfish dip, they expected it not to be cold. Positive feedback otherwise. Snug/Lobby: Filled up fast by 5:30 last night. There was a complaint to front desk about the bartender making too much noise setting up, and talking too loudly to a coworker. This was at 3:30, the bar was not fully open yet and Collin was likely still setting up. Had a brief conversation with him about presence and professional etiquette. Also touched on it at stand up in Condor. Will be a repeated reminder up until the buyout as floor presence and professional behavior will be extremely important during that event.  Fizzled out quickly after 8:00 as the rain picked up. 12.22.25 PM NOTES

 97 Covers (almost half were walk ins) I think we will continue to have a very large amount of walk in tables until after the holidays. It was a challenge having Alana at the door as I wasn't able to support the servers as much as I would have liked. They were stretched a bit thin as there were only three, but they did a good job helping each other out. We need to work on getting Alana off the schedule entirely. Formal warnings etc.... Keegan, Riley, and Angela all complained to me separately about her lack of communication with seating tables.  Alana asked about a paycheck... I didn't see any in the office. Can we follow up with her about this? Also, where are physical checks kept that need to be passed out to FOH? There have been numerous complaints about Claire from both servers and tonight from Octavio, who was extremely frustrated that she wasn't helping run food. 12.22.25 FOH AM

 Busy morning.  Mia out, eve came in but was sick and left at 7am. Sydney came in at 10:30 sick so I sent her home. Rolo and I did well this morning, but got crushed. Everyone was overall happy, but service was slow and it all came at once, european bfast wasn't replenished, coffee station ran out. We did the best we could. Rolo is wonderful sport and awesome attitude.  I added Sundji on Christmas morning for extra hands.  Confirmed with Mia that she will be here tomorrow.  Even with rain, we need to keep all servers on.  **Added on "events" this week- 12/25- Chef Brandon will be in Mariposa on christmas for a pingpong tournament- send 10:30 server to be of assist.  12/26- chef brandon will be in condor doing board games and hosting- 10:30 server to be of assist for this outlet too.  12/26 PM Dinner service- 12 top at 6pm for Jeremy, Eric, Donovan Leitch, other local VIPS. 12/21/25 AM NOTES

 Eve did not come in today either, not sure what she communicated with Luc, but there was no barista to open in the morning. Brandon is always helpful and willing to help out.  Anna arrived at 7:30, she is great on barista, so she took tables and assisted with coffee drinks, it was not too busy first thing in the morning, which made me feel like we would get busy after 9, which it did. Paco was on too, and we split them in sections so it worked out. Ruben was also on by then, and could focus on coffee drinks, so Anna could focus on her tables.  Zammy came on at 10:30 and took over Anna's section, he got a 11 top at 10:55, and did a great job. I gave him kuddos for putting in proper seat numbers, and staying on top of the table. 12.21.25 PM NOTES

120 Covers Easy. Smooth. Well paced. Service was tight and the kitchen was on point.  Joanna trained with Amanda at the host stand and was great with guests. Sundji had his first official bussing shift in Condor and did well. Snug was more mellow than it has been the past few nights and I cut Jean around 7. Very few voids or comps.

12/20/25 AM NOTES

 Eve called out for a medical emergency, Satia covered her, and arrived at 7:15, Anna arrived shortly after at 7:30, we sent Satia home once Eric arrived for bartender.  The European Breakfast picked up around 8:30-9, and we had a decent amount of guests ordering off menu as well. We had our usual lull between 10-11:30, but we were able to break, and do a thorough pre-shift.  Anna went home after 11 or so. Zammy was in the front station, Paco was in the back and the pool. Sundji was bussing today, and it was so nice to have him here, really fast and efficient, and he has a great attitude.  We got a nice little rush for lunch, Paco needed assistance to get to his tables, since he was busy at the pool as well, I was happy to get his tables started, and food ordered for him, guest service wasn't compromised.  We had a lot of food in the window at the same moment, Sandji did a great job assisting, but the team themselves need to work on running their food.  Ril...

12.20.25 CONDOR + SNUG

 90 Covers  28 were walk ins Snug was very busy, per usual. It was helpful to have two servers and two bartenders. Unfortunately, Lauren's break got missed. We need to continue to make it clear that every bartender should count on taking a break every shift no matter what. I had to comp 4 tuna tostadas, all from the same table. The complaint was that the tostadas tasted "fishy" and that their appetites were "ruined." The tostada consistently gets complaints due to the tonnato sauce... Something to perhaps address with Chef Brandon. Jerry expressed that he would like to cross train for serving. I told him I would talk to Riley about it, but I think he'd be great on the floor. Corinne E. also expressed her desire to learn how to serve. As I sit here in the office waiting for Collin to wrap up the Snug, I am wondering if we can take him off closing shifts? He consistently takes the longest to close things up and always has an excuse as to why he is unable to do...

12/19/25 AM NOTES

 James called in sick, at 5:43, only 30 minutes before his scheduled shift. Brandon as always was happy to support in making espresso drinks if necessary.  Ruben came in at 9, instead of 11 to help with espresso drinks, and set up the bar. He mentioned he wasn't feeling well, and brought cold medicine with him. I broke him at 10. Once he got back from break around 11:30 he said he definitely wasn't feeling good, and had to go home.  Mia also mentioned she wasn't feeling good, and I asked if she could wait it out a bit until 12:30 to see if anything happened with business, she seemed fine with that, but once Ruben went home, she wanted to go home as well, so she finished out the table she was waiting on, and went home from there.  Cocina was not very busy, with just a couple of tables, so Paco was handling it.  There was a table that didn't care for their bluefin tuna tostada, he thought the fish would be cooked, I let him know it was cured, but no that it had no...

12/19/25 Condor/Snug

 Condor: Started with 60 OTB. Finished with 91. Very quiet for a Friday. Steady flow throughout the night. Began cuts at 7:30. Positive guest feedback. One of Evan's tables had very odd requests, and seemed a little off. They wanted a steak to be cut in half and cooked at two different temperatures. Aside from that, business as usual.  Snug: Quiet as well. Ran with Collin and Corinn alone after 8:00. Subtle waves throughout the night. Holiday drinks sold well, especially Cider and Rye.  Eve Clearou called me at around 11pm. She's recovering from a pretty serious medical situation (Ectopic Pregnancy) she'll be fine. But is going to need a little time to recover from treatment. Satia is covering for her again tomorrow. Eve is extremely tight on money, and although she was told strictly not to work, especially tomorrow, she can't really afford not to. She asked about accrued paid sick time that she could use at least for tomorrow's shift. She should have enough she...

Thursday 12/18/25

Condor: 11 covers. Finished with 21. Extremely slow. Cut most of the staff by 7:30. Ran with 1 bartender 1 server the last 90 minutes. Nothing of mention to report.  Snug: Very slow as well. Cut Sydney around 7:30-8:00. Had a few people in after 9:00 including Brooke and friends. Not much else to report.  No further development on incidents that happened earlier involving drunk person in the lobby. Chase (maintenance) checked in on the drunk couple in Bungalow 4 after an earlier incident. He had to help the woman from the bathroom floor into the bed. Checked in with Daniel about further intervention his direction was to leave it be and let them sleep it off. No further interactions on F&B side since I've been here. Spoke with Shaun about the furry friends in/under Condor floor. He has traps set and has a strategy. No sightings tonight.

12/17/2025

 Steady night in condor slower night in snug rotary event went smooth Rat problem in condor, multiple guests saw. Chase on it, sean and chase to investigate further tomorrow.  Comp in condor- group was unhappy that the shrimp tails weren't hanging over the edge of their shrimp cocktail.  Filled a spray bottle of vodka to help with polishing. Demo'd polishing with everyone. It should NOT take as long as it does right now to polish glassware.  Room 44 came in for dinner. He ordered a bottle of champagne to the room tomorrow to be delivered at 630am. Told fernando at the front desk. Texted warner to confirm. He was pretty intoxicated, invited me to sit down at the table and join him probably 10 times within 5 minutes. His other half had left. Weird vibes.  Emma asked me to help her twice with being double sat. Happy to help, and glad she asks, but when I saw she was double sat I went up to her and I told her she could handle it, just to go up to the first seated ta...

12/16/25 PM FOH

Mellow Night Concert night 2- chad and cat from show pony did great.  More mellow than night one.  Had issues with sound system on patio, volume seems to raise randomly.  Jeremy commented to me regarding 300's patio. He is really wanting us to start seating this, the only way I see this being possible is to have our entry door near patio, I think we should start running the heaters, having it set, and seating if needed. Just so we have it "on display" Claire left IRD messy again, Keegan was frustrated and shared with me that this is a common occurence, and Claire won't contribute while servers are polishing, that Claire stands around a lot. I will make a note to file in Claires UKG. Let's keep an eye out, and we will need to start checking her out at end of shift.  Buyout schedule pretty much complete, we won't need to hire much from the outside. Kirsten and I meeting with Brooke and Daniel tomorrow to discuss staffing needs. We are really trying to want to av...

12/16/25 AM NOTES

 Very slow at European Breakfast, with only 12 guests.  We had 17 covers at lunch, one being a party of 10, so I kept both Rolo and Mia on, which worked out well, since it was a little steady at lunch.  We did not have confirmation from the 10 top either by phone, or resy messaging, so I cut Rolo at 1:45 only for them to show up a few minutes after 2, which was fine, and he stayed on a little so she could get the large groups order in. Only a few of the 10 ordered food, but they all ordered drinks. They seemed to have a nice time, and left a little after 4, and hung out in the lobby for a little bit.  I finally had a chance to have a verbal warning to James about his excessive tardiness, Chef Ann was my witness. He understood, and I hope he will take the conversation seriously, and start being on time.  The switch for the coffee grinder came in from Handlebar, and Luc was going to help fix it, hopefully that will be the trick to getting it to work again.  I...

12.15.25 PM NOTES

 67 Covers Very smooth night. Event went well. No kitchen issues. Customers happy. Riley got bit by a dog in the restaurant. Luckily, she was wearing Doc Martins and the bite didn't break the skin.  Comped a steak Lauren rang in by accident and a guacamole gift.  We were all in by 7pm and Condor was pretty much dead by 8:30pm.

12/15/25 AM NOTES

 Steady European Breakfast that was spread out all morning so it never felt busy. It was nice and it allowed me time to go to the morning meeting. Rolo and Eve had it under control, for the small time I was gone.  We're once again asking names and room numbers from guests, since it was brought to our attention from Shelby that sometimes the names and room numbers don't match up. I'm also asking the server to please let the guest know to fill out both portions of the check. After breakfast, Jazz and Rolo were working, I left both on since we had a few reservations, the whole patio filled up, and a few were at the pool, maybe 3 groups of 2.  Rolo clocked off at 2, but unfortunately went over 6, because he clocked in early. It probably would have been best to just break him.  Jazz finished up, did the closing sidework, and Eric was good to take the last few tables if necessary, and we did have 2 more groups come in at 3:40 or so, but no big deal, we had some last minute...

12.14.25 PM NOTES

 69 Covers Lobby was packed all evening. Corinn handled it with a calm demeanor and a smile, but it was a lot to handle. I spent a lot of time bussing and taking orders. There were also a handful of customers walking over to the Condor to order drinks to then take back to the Lobby. At the beginning of the night Lauren's entire bar was sat. All bartenders took breaks and I had Jean stock up Snug before he left. I cut Killian early as he was feeling ill. We had one late reservation at 9:30. The restaurant was pretty much empty by then save for some folks at the bar. Voided an entire ticket that had been rung in as a duplicate ticket by Lauren and comped a caesar salad that Alfonso rung in by mistake.   It sounds like we might need to retrain Chad on some basic cocktails as a few different guests (from the same party in the lobby) were opting to have Lauren make their drinks as hers were "so much better." The drinks included an old fashion, a best friend, and a martini....

12/14/25 AM NOTES

 Decently busy morning for European Breakfast with 38 guests, with the bulk of the people coming in after 9 until 10.  Eve left early since her baby was sick, and had to be taken to the ER, Anna was fine to hold down the fort until Paco arrived at 8:30.  Once we got a bit of a rush we had a couple come in that were locals, and not hotel guests, they were sat in Anna's station, for some reason Naomi asked Paco to take the table, and the table was overlooked. I was refilling the breakfast station, when this happened, and was disappointed to hear that they left, because they didn't get served. The guest alerted valet, and Shelby came to ask me if we were really busy, and I let her know no, not enough for anyone to get overlooked. It simply came down to the hostess asking Paco to take a table out of his section, when he was busy, and he said yes, because he doesn't want to let down the team. 12/13/25 PM NOTES

 Early push in the lobby- needing to troubleshoot this.  -Lobby server in time -Break schedule for bartenders -2pm-8pm bartender on friday & saturday needs a break too.  -Deff needing 2 servers, 2 bartenders.  Sundji new busser did GREAT. 12/13/25 AM NOTES

 Steady day for most of the day. 36 European breakfast, a bit of a lull between 10-12, having the staff do some sidework during that time, helps keep them for doing it later in the day.  I cut Anna at 11:30, she arrived today at 9:30, she was scheduled at 7:30, but was having car trouble. Zammy came in at 8:40, also 10 minutes late for his shift, I asked him while he was walking in if he was late, and he said yes, I reminded him to reach out even if you are running a few minutes late.  Sydney also came in a bit late, she told me she would be there today around 11, but arrived closer to 12, it was fine, and she continued to text, and keep me updated. I would almost suggest that we turned the second 10:30 server in at 12 instead. Then we can keep them until 6, if there is support that is needed in the lobby. They needed help in the lobby between 4:30 and 5, and Sydney was able to jump in and support.  We had covers for lunch today 28 to start, we finished with 38, whic...

Condor: Very slow for a Friday. 50 on the books. Finished with 92. 26 xcl/no show.  Christmas event down the street was the big draw tonight. Did not get many walk-ins, Cut half the staff by 8:00, Skeleton after 9:00. Two vampiro tacos sent back, DNL -- One sea bass returned saying it was undercooked. Prime Rib Special very well received, one customer/self-proclaimed meat aficionado said it's the best meat dish he's had maybe ever. Lynne was cut at 8:30. After a long soapbox rant she returned her uniform and signed papers, received check. One of her vests has been tailored. Uniform and signed sheets are on the desk in the office. She did not clock in or clock out today. Since she was given final check, are we calculating tip out from tonight and sending it to her or was it built into final check? I clocked her at 5 hours and input it to spreadsheet but can amend if necessary. Closing was much better than last week, though the espresso machine was still not fully cleaned, we nee...

12/12/25 AM NOTES

Decently busy European Breakfast, Mia misunderstood her schedule, and arrived at 9 am, instead of 8:30. It was fine. Since Mia thought she was 10:30, we had one server arrive at 9, and then two at 10:30, which only 2 are really necessary at that point. So Rebecca went home around 10 minutes after arrival.  Having Mia on the floor over Rebecca is helpful, she is a stronger server, and works La Cocina more frequently. 12/11/25 PM Condor/Snug

Conder: 40 on the books. Finished with 80. Fair amount of walk-ins. Evan complained about being triple-sat by Alana around 7:00 on the patio. Most of the inside was full at that time, so the seating was unavoidable. Encouraging servers to ask for help in those circumstances as it's a pooled house and we can always find someone less busy to jump in and help. Kitchen was backed up briefly during the push, recovered quickly. Side work and breakdown was done efficiently, all condor staff out by 10::15. Snug: A couple small waves but quiet otherwise. Cut Collin at 7:00, D'ete at 9:30. Grayson closed. Someone carved letters into the wooden bar top in snug. Maintenance is checking cameras, and discussing how to fix.   * Prefunction Bar has been stocked with utensils, glasswares, + event beer & wine. There is extra well spirits by the pos. Hand sink is leaking, bar fridge lights still need repairs.

There was also a little uncertainty as to who was entitled to receive free movie tickets. If people order dinner (special or not) and we still have tickets, they are welcome to them! Very quiet day, although we had a decent flow of guests joining us for European Breakfast. We accounted for 34 breakfasts.  Jazzlyn called in sick, so I asked Rolo how long he could stay, and we was good to stay until 3, and I broke him at 10:30. We didn't get much business from there. I would say 5 tables total all day.  I had Rolo leave at 1:15, and Jean was solo for the bar, the floor, and the pool. It was a little nerve racking to make that call, but I knew that I could assist him if necessary.  Jean did a fine job of taking tables, but it would be better is he was trained more on the food, and could recommend and talk about our items, he's more of an order taker. 12/8/25 AM NOTES

 Pretty steady European Breakfast today. Jill sent out an email, saying we should expect it to be busy, and it was decent. There was a bit more of a flow, instead of one really big rush, which helped with keeping up with the guests, and making sure the station looked nice and full. Rolo calculated 47 European Breakfasts, so that is pretty good.  Eve called in sick again, once again only 15 minutes before her shift, I was telling her it would be best to let us know the evening or day before, especially if she went to the doctor like she told me. She said she was sick in bed all day, and it was difficult. We were cut off in our conversation on the phone, but she did call me back, and let me know Stacia would be coming for her, but couldn't make it in until 7:30, which was fine.  Once European Breakfast slowed down around 10:30, we cut Stacia, and then cut Ryan in IRD early, I would say around 12:45.  It was Rolo, Jazz, and Ruben on the floor with some action at the poo...

12.7.25 CONDOR + SNUG

 68 covers Corrrine did a fantastic job at the door tonight.  She paced the seating out well and was great with guests. We had a busy push from 6pm-7:30pm and the kitchen was able to execute despite being a man down. Ivan jumped on expo and Claire and Killian helped run food.  Satia, Alfonso, and Keegan were solid on the floor and finished strong.  Snug felt like a weekend night. Corinn C. did a good job keeping up with the continual onslaught, but it was a lot for one person. I spent a fair amount of time out there throughout the night clearing tables and running drinks. I wonder if we might want to staff two serves on Sunday nights throughout the holidays? Something to consider as it seems to be everyone's favorite destination in town for drinks currently! Jackie has dubbed it "Ojai's living room" lol. Not much else to note. Very few comps and voids. 

12/7/25 AM NOTES

 Very busy for European Breakfast, especially with the Koch group joining us at 8:30. Most of the Koch group ordered off menu, as well as some European breakfast. So, the timing to get 17 different items out was not ideal, and I would say that after the original items started coming out, the last 4 items, all chilaquiles came out possibly 30 minuts later. So ideally we would have had a preset menu for this group. that could have been served family style. I talked to Chef Octavio, and he said we should discuss breakfast preset menus for large groups as well. The Koch family is incredibly nice, and generous, so they had nothing bad to say, but the chilaquiles were asked about at least 4 times.  Beyond the Koch group it was still pretty busy, and we waited on hard boiled eggs for at least 30 minutes or more, we had a few requests for them, but we got them out eventually.  Eve called out, at 5:55 via phone call to me, which was 20 minutes before her shift, so I will indicate ...

12/6/25 FOH Condor + Snug

 103 covers There are new heaters in the 300s. I still choose not to seat people out there as guests in the booths and the 30's always complain that they are cold when the doors to the 300s are open. The cold continues to be a challenge and I had to move more than a few tables inside, even a couple of tables that had requested to sit on the patio. Alana at the host stand on a weekend night is frankly a nightmare. She was texting on her phone at the host stand at the beginning of the shift and is slow to process direction or feedback. I request that she only be scheduled on days that typically have a slow service as she is not friendly with guests nor does she have a good work ethic in general. Both Evan and Emma approached me about their tips.  Steady European Breakfast with about 30 guests, and then a bit of a lull from there until 11:30, it gave us a chance to break the bartender and both servers, since they would all be staying over 6 hours.  Anna called out yesterday for today, which was fine, I adjusted the in times for Zammy, and Paco so that we had two servers at all times. Peter called in and said he needed to be on medical leave until December 16th, Jess connected with HR to see what the next steps are, we will get more info from Barbara on Monday. Amanda was the hostess today, and is a great support when it comes to bussing and resetting the tables. GLASSWARE

 Hey All,  Lets have a check in on glassware on our Wed meeting, some items that might need to phase out or are not being used as intended to review.  For now though, I just want to help streamline where things come from:  Luc - can order all item through breakthru - this is your stemware We have two wine glasses - one is ALL PURPOSE  (Congresso Bordeaux 20.9 oz) and one is meant to be for sparkling wine, but I think we are using it for parties- that glass is (Forte #1 17.4 oz) There is about $3.50 difference in price with the Forte being more expensive.  Water glasses (Libby 159) Chicago Highballs Libby (2519) , Double Old Fashioned Libby (2307) can all be ordered via IFS - not sure who you have order from them, probably kitchen Beer Glasses and Mexican handcrafted rocks glasses are via Chef Brandon,  Luc can you order 4-6 cases of Congresso Wine Glasses? 

IRD Protcol

 Hey All, forgot to leave this.  Due to IRD key fab going missing for 5 days, we made a quick plan yesterday. The closing IRD person needs to be informed that they turn the IRD key into the MOD at end of shift when doing paperwork.  We will put that key in the lock box 221 on the wall and the opening manager can get it to the opening IRD next day.  Mid shift there is a sign in and out sheet at IRD for them to hand off. We can clean this sheet up but we are using what they previously had been using. Brandon B helped us sort this.  Thanks.  Yes, can we add the wine area for server to break down to the sidework sheet? Do we want the second to last in or the last in to do this?  Bars also often under stocked in waters and sodas, All cold stock should be end of shift. non cold stock can be left for opener if Luc would prefer, not clear.

Luc replaced the grider with another for now, the one acting up is in the liquor room. Condor: Quiet on the books (62 covers) though we had an early push. Multiple reservations came in 30-90 minutes early, we accommodated all but it was a little tricky. Lobby filled up by 5:30, D'ete had a couple parties complain about service and wait times. I think she came in hot at 6:00 and it was already busy and she ran right into the weeds.  Voids/comps:  Voided a misring from Alfonso, rang a full ticket under IRD by mistake.  Comped two desserts for gm of the Dutchess. - Christopher from housekeeping spoke with me about Eduardo (Busser) being prickly with housekeeping staff about bringing bus tubes from in-room dining to the dish pit. I spoke with Eduardo and told him to accommodate them the best we can if it is very busy and the dish pit is slammed they can stash what they bring in the Cocina kitchen temporarily and we will move it into the pit when there is space. - Corinne (host) would love to work more IRD shifts.  16 guests for European Breakfast, so not terribly busy. Mia was about 15 minutes late for her shift, which seems to be a constant issue.  We cut her by 11, since there were 2 more servers coming on, Paco and Rebecca were left. Paco took the back, and the pool, but there were only a few people at the pool today. I cut him around 1:30 to assist with Rebecca, but I could have cut him earlier.  We could probably omit one server, and have Mia stay until 3:30, instead of cutting her right away. It's hard though, because Paco only has so many shifts, and Rebecca only works one day a week.  We got a bit of a rush around 12:30, probably 5 tables, and it stayed a bit steady until 1:30, all the tables outside were full at one point. Pre-Shift notes: Addressed lingering/chatting on the clock with FOH staff. They were told to transfer working tables as soon as you are cut, peel off the floor and spend a minimum of 20 uninterrupted minutes doing side work. Expect completed side work to be checked by MOD. Then promptly complete cash out and punch out.   Quiet night in Condor, cut Satia around 7:00, trimmed down to skeleton by 9:00. Lobby had an early pop with people lounging before the Conservancy Event. Holiday cocktails and hot chocolate were well received, also heavy wine sales.  D'ete vocalized concern over floating parties in lobby leaving without paying. One woman left without paying for her drink, two fish tacos walked out. In addition to room numbers a general practice of holding cards or getting pre-auth's would be a good conversation for lobby, and pool.  Event for Turtle Conservancy went smoothly. She said it was all false. I leaned into the conversation of counsel and transparency, and that the formalities had to be performed of documentation, but to learn and grow from this and lean on MOD for support. She said the lady was nasty the whole time, and that led me into my next conversation about going above and beyond in hospitality to try to turn the situation around. She said she asked for to go but was trained to say no. I told her that I can't confidently speak on previous management, but this is a situation where we could have made the lady feel better by killing her with kindness, went over we didn't know her situation, she was alone for thanksgiving.  IRD key fob missing- has anyone seen? Condor Net: $5,090,00 Snug Net: $1,464.00 Cocina Net: $1,099.50 Event Net: $2,892.00 Steady night in Condor, slower start, pop from 6pm-7:30. FOH team handled it great. Great communication between all servers.  Colin opened snug and then assisted Jean at Condor starting at 5:30. 12.1.25 AM NOTES

 Very quiet today, with only 19 guests staying at the hotel. 17 guests joined us at the European Breakfast.  Paco arrived at 10:30, as well as Rolo being there, James left around 11:30, and Ruben took over barista and bar.  It stayed quiet, and I considered sending Rolo home, but Paco is still getting his pacing and can be slow with service still, so I kept him on just in case we had a lunch rush, and Rolo went home around 2.  We had a manager meeting from 2-3 in Condor, and I told Ruben to grab me if needed, and let him know to keep an eye on Paco, and making sure that guests needs are met, if he gets behind. They didn't seem to get too busy, and by time I went back to Cocina they were almost finished up with sidework, and done for the day.  We put up the chairs in Cocina, so that housekeeping could do a more thorough job on the floors, they were missing under the tables.  Hey All,  I spent time going through the obvious variances today with Marla. We only went through recorded CC tips, not cash tips, but we are reconciling any cash variances tomorrow. Please see the below.  It is expected to have some growing pains in the first - a few things for managers - PLEASE  Review all your staff check outs every shift next few weeks, make sure sheet is saved and accurate before you go.  PLEASE confirm the total amount of cash and CC tips is accurate to what you have for cash drop and total of CC Tips (TIPS OWED) PM CLOSING MANAGER - Please email Marla ALL Tip Sheets for Day, she will reconcil in real time, we will print after her review.
