2/27/26 AM COCINA NOTES

 Steady Euro breakfast with Jeremy's family staying at the hotel. We had 45 guests join us. I will mention that a lot of the guests were surprised by their checks, may it be a latte, hot tea, etc. we also brought them 0 balance checks for Euro breakfast too. and they were not happy about it. The staff does let them know, it's just a way that we account for the breakfast. I spoke to Shelby and Kiersten and they should be getting checks and signing them to their rooms, so by time the weekend ends they'll be used to it. The staff is just feeling intimidated by the guest response.  Lunch was okay, steady. We sat just the inside, since we were setting up for the party tonight.  Claire had a handful of guests at the pool, I needed to let her know and clarify who was on Jeremy's tab, she almost put everything on his tab. Jeremy's MIL was taking care of the rest, and I had to go and confirm that she was good with that, and she was.  Mia approached me at 2:45 to ask about a ...

2.25.26 PM NOTES

 Started with 18 Finished with 50 Ran with two servers- Alfonso and Angela. Jerry trained with Angela. Next time he trains I want him to take some tables and be shadowed. He's doing really well. I told him to study up on the cocktails, food, and wines by the glass. D'ete was out sick so it was just Collin and Grayson in the Snug/Lobby which was totally fine as it was DEAD. Grayson did some stocking and batching. We need vanilla paste for the bar. We also desperately need buffing rags for IRD. Lauren gave me a list for bars of: 10-15 fine strainers, 8-10 cheese peelers (same as the one that is currently at Condor Bar). She also said that we are INCREDIBLY low on glassware of ALL sorts. She said that it is a constant shuffle of stealing glasses from one bar or another to make drinks, especially on busy nights. She said that 90% or what IRD is doing is dealing with the glassware shortage. I'm a bit worried about the martini bar for the buyout... not sure if we have enough coup...

2/25/26 AM NOTES

Euro breakfast was pretty quiet, all of the hotel guests that were here came in, which was 15 guests. Not much for regular breakfast, besides two other tables.  Mia came in and broke Rolo, she had a lot to say about things going on here. She wanted to see tip sheets, which I didn't currently have printed out, but I let her know they are on the computer and she always has access to them. She wanted to know the tip out for the event, as she feels like the group probably spent about $3000, which was not the case, but what she assumed.  She also brought up the fact that she was scheduled on Tuesday without being notified first, I let her know if she can't work on Tuesdays she should take it off as available. She wants to know what's happening with the audit, and if they are owed money that hopefully the hotel realizes that they are to be paid a fine of $250, as well as interest on the money owed.  Condor: Started with 24, finished with 34 plus some bar tops. PPX Friend of Daniel G came in, owners of Ojai Roots Farm came in, they had a very nice dinner. Splashed dessert. One of Angela's other guests was bit difficult, asking her to leave when checking on table and being rude, even making the other guests sitting with him a little uncomfortable. Sent back a duck because he expected it to be served sliced, ordered a fish taco instead. All positive feedback from other tables. A couple of voids due to guests changing mind. Cut Ali around 7:00, Joehana at 8:15, Jerry at 8:30. Quiet night otherwise. Snug: Quiet. Cut Collin at 7:00, D'ete and Margie finished out the night. Not much spill over from the party in Mariposa. There was a strange interaction with a guest in Snug, who came in immediately demanding a Manhattan, and also the whereabouts of Sydney (server). 2.23.26 PM NOTES

 Started with 23. Ended with 52. Verrrrrrrry chill night.  Satia came in on a date (so cute). The restaurant had one pop where it felt full, but it was pretty quiet overall. I printed all of the tip sheets from the recent pay period and put them in the Condor tip sheet binder. I think it's important to make it as easy as possible for servers to reconcile their tips so that is what I plan to do moving forward.  Had a meeting with Brooke about inventory, front desk wine ordering (as Hailey used to take care of it), and starting to use tipple seat (it's a whole thing that is linked to opera and some other program called canary). Long story longer, I'm going to have to train with Brooke on it all when she is back from her trip. One clear directive that came out of the meeting was that she wants the wine and liquor room door closed at all times. She said that it is a liability and every single time she's been over here, it's been wide open. I told her we would be better ...

2/23/26 AM NOTES

 We had 23 guests for Euro Breakfast, which there were only 28 guests that stayed the night, so almost everyone came in. We had two couples come in after Euro, one was in time, and we had a few items still available and on display. The second couple came in almost at 10:30, and everything was definitely down, they were understanding, but then their food took a pretty long time. I went to check in on in, and the kitchen hadn't even started it. They had some water issue spraying on the grill, so in the process of cleaning that up, they missed the ticket. Ultimately, the food came out, but I felt like taking care of their meals made the most sense, considering they waited close to 30 minutes.  Rolo mentioned that it's been difficult since they moved the breakfast kitchen to the main kitchen, especially if the staff gets busy. 2/22/26 AM SHIFTS

Busy Euro breakfast. We found it busy by 8 am, and I spoke to Danny about having staff on closer to 8, instead of 8:30, so that we can stay ahead of business, instead of playing catch up. So I asked Naomi to start to come in at 8:15, and Sundji to arrive at 8:30. Sundji arriving at 8:30 was a big help, but Naomi didn't arrive until 8:50, so that put us behind, and we weren't able to get guest recognition, like we would like to.  I spoke to Riley about making sure we're prepped for Euro breakfast as well, she will be talking to Octavio. We ran out of our fruit platter, and I mentioned to Abel at 6:30 in the morning that we would need 2 platters for sure, which is the norm for busy weekends, he let me know that he was only one person for the day, and I said that's okay, that he didn't need to do it right away, but to do it soon as he could. I asked him once again around 8:30, and came back 20 minutes later, and he still hadn't made it, which at that point made it ...

2.22.26 PM NOTES

Started with 16 and ended with 50. Emma volunteered off so we went with three and I cut Ali around 7pm. Corrin had a table that walked out in the Snug so I had to comp a couple of drinks. She also had a woman complain about the up charge on the aperol spritz. I have had complaints/questions about this before and I feel it would make sense (especially before summer aka aperol spritz season) to make a new button that doesn't separate the aperol and the spritz. It's confusing for customers and they feel like they are being overcharged. Claire left without cleaning the coffee station and I sent her a text with a picture of it. 2/21/26 Condor/Snug

Condor: ​Started with 105, finished with 134.  Busy from 6-8:00. A little mellow for a Saturday, possibly affected by a bad accident up the road, and the marathon in town tomorrow. Fully staffed on the floor. All feedback reported to me was positive. Margie had a declined card that still printed a check with tip/total lines as normal, when looking closely it does say declined, but she understandably missed it and presented it to guest who signed it as normal and left. It’s the first I’ve seen of this, and I don’t know if it’s normal or just a micros quirk, but we should mention to staff to be aware that it’s possible it will print despite being declined.  A note from Will to Bartenders, they can grab their own popcorn orders.  Snug: On the mellow side as well. 2/21/26 AM SHIFT NOTES

 European Breakfast was very busy, and on the earlier side today. The main dining room was full around 8:15. So, it was just one server at that point since our next server arrived at 8:30. We don't run into that too often, but it was a bit stressful for a moment, keeping up with tables and the buffet, and coffee as well. I asked Sundji to come in at 8:30 tomorrow, and it might be good to start the busser shift at 8:30 from now on. It will help us stay ahead of things, instead of playing catch up. Euro breakfast stayed pretty busy until the end, we brought items down soon after 10, and we were out of a few things.  We had a party of 8 at 10:45, which was nice, since at that time we have a bit of a lull. 2/20 SNUG & CONDOR

Steady night in both outlets.  Condor service went well, including 15 top pre set menu. All guests were pleased with menu & service.   Seabass sent back for being too dry-I tasted it and it was indeed very dry. Will was told, and he corrected.  Lobby service was good- launched service well and I tried out having the closer be the service bartender, but it works better with opener being service bartender. I think for summer, Snug will demand three bartenders over the course of a shift. I will connect with Luc on that.  Recognition in the lobby we will be piecing together- a big one to eliminate any guests walking on checks is to be asking all snug guests if they are staying with us. We did not having any hotel guest walks tonight, but we did have two customers walk on a check. So I think there needs to be a plan put in regarding starting a tab or closing out. 2/20/26 AM SHIFT NOTES

Mild Euro Breakfast with 27 guests, they trickled in this morning. Zammy and Anna handled it. I broke Zammy at 10, and had Anna watch his tables, and take anything new.  Anna and Eve got cut soon after Mia arrived. Mia took over until Zammy got back, and then they both had a section. I'm trying my best to teach the staff guest recognition, but they're having a hard time with the thought of asking for phone numbers for walk-ins. I talked to Danny about that as well, and it really about finding the best verbiage when seating a walk-in. He mentioned letting the guest know, we use it just in case anything is left behind. So, we will work on it. I will try also to do my best to be at the host stand, but it's not always easy to be stuck up there.  Claire came in for the pool, it was quite cold so there were no guests, but she set up the pool which was needed, and I sent her home soon after. PM NOTES 2.19.26

 41 Covers The standout note of the evening was a customer complaint. Amanda called me over to talk to a guest who was upset that there server (Keegan) was not very attentive.  The man said that their serve was off doing who knows what and never checked in on them, but that all the other staff stepped in to take care of them. He said that he and his wife had been looking forward to having dinner here for a long time and that they were here to celebrate her birthday which went unacknowledged. We got to a good place before he left, but I will email him tomorrow and invite them back for drinks and/or an app on us.  When I talked to Keegan about it she was genuinely flummoxed. She said she had asked them how their dinner was and that they had said good. I asked her about the birthday and she said she had seen that there was a birthday noted on the chit but that they didn't order a dessert so she didn't know to do anything. 2/18/26 Condor/Snug

 Condor: Started with 35, finished with 35. Plus bar tops. Very cold out, filled up inside at 7:00, but relatively quiet on the bookends. Service was good, no DNL's/SFU's or voids. Dinner and a Movie Special got positive feedback. Noticed a couple of Micros quirks. The terminal in IRD kitchen does not let me pull up the 86 menu under manager tab. the button is just not there. I put a count on Spiny Lobster on the terminal in Condor, but the terminal in the corridor did not reflect the change, despite multiple refreshes. No problems otherwise. The event in La Cocina started and ended late, service was smooth. Staff was out by 9:45. Snug: Pretty quiet in lobby for most of the night. Not to much action before the movie, or after. The Cocina event spilled heavy into lobby at 9:30, but it was mostly groups standing around talking, not heavy on drink orders. 2/17/26 Condor/Snug

 Condor: Started with 52, finished with 70 plus bar tops. Surprisingly busy despite the cold rainy weather. Kept patio closed due to rain, sat the front patio until around 7:00. Service went well, kitchen did fine despite being short-staffed with sick callouts. No DNL's. Phased Angela out by 8:00. Ali by 8:30 and Satia closed with Grayson. Claire got rained on again fetching the a staff meal across the street I would like to get a poncho for IRD.  Snug: Mostly full lobby through the early part of the evening. 26 Covers >>> It was a sleeper folks! Pre shift I spoke to Satia as she was closing down the bar in Cocina and she mentioned that Chad had told her that he's going to be out of town next week. She was wondering if she could take on one or more of his bartending shifts as she's been getting in practice in Cocina and would like to get some in at Condor. Might also be an opportunity for her to do some bar training at Condor tomorrow with Grayson as she is scheduled and it looks to be super slow again (could probably run with two servers). Also, the rocks glasses should be put in the blue dish rack (or else they don't get fully clean). Only the water glasses go in the yellow dish racks. 2/16/26 AM SHIFT NOTES

 First day for with my new opening schedule, and Rolo and Eve had it pretty dialed in, just a few small adjustments were needed, but I liked how Rolo set up the Euro breakfast station, I'll take photos because it looked nice. I came in closer to 7:30, because of the long weekend, and I knew we were at full capacity yesterday, and there would be a lot of checkouts. We had 81 guests at the hotel this morning, so it was definitely busy for Euro breakfast. Chef Ann dialed it in pretty much on track with the amount of things to put out, but we ran out of danish and banana bread 10 minutes to 10, but had conchas still available, quiche ran out soon after, and then rolls, scones, etc. but at that point it was 10 on the dot. We do often have people come in at the cut off point, but I felt fine leaving what was available, and removing everything around 10:15.  A lot of guests sat outside for Euro breakfast, as that is all the tables we had available, but it was nice and cozy out there,...

2/15/26 AM SHIFT NOTES

 Very busy Euro breakfast, it seemed difficult to keep it filled, guests were coming in large waves, we would fill it and within 15 minutes, it needed to be filled again.  Danny came in with his wife and kids, he ordered a french omelette and it came out without cheese, the kitchen gave him the wrong one, that was ordered for another table. We got him a new one, but he left soon after, mostly because his little ones needed to go. I would say his food took a little long. We do need to work on ticket times for breakfast, I feel. Lunch seems to be better, but breakfast takes a little long sometimes.  Lunch was nice and busy, we had two servers on, and Paco on the pool again, I told him we could put Zammy on the pool, but he said he preferred the pool. The pool was not super busy, so I wish Paco would have come in to help more often, but it's difficult in the middle of service to grab the pool server. 2/14/26 VALENTINES AM NOTES

 Anna was 40 minutes late for her 7:30 shift, which means it was just me and Eve on barista on the floor. We were at 98% occupancy so it was busy already by time she got here. Zammy came soon after and we were able to recoup. Then Paco arrived at 9, and I was grateful that he was scheduled early so that he could help us focus on replenishing Euro station, and coffee, and check with any guests that hadn't been greeted or checked in on yet. We kept things running like that until after Euro breakfast. At 10:30 we had Eve go on break, and the bar waited to break after. Paco checked in on the pool, and set that up, and Zammy and Anna were still a little steady, and continued taking breakfast tables. Sydney was supposed to be in by 11:30 with the goal for her to break both Zammy and Paco, but she didn't make it in until 12:30. I had to go with plan B, Paco focusing on the pool, and helping the floor, but we only had 4 tables, so I broke Anna and Zammy at the same time, or we wouldn...

2/13/26 AM NOTES

Euro breakfast was decent Anna did a good job handling guests, until Zammy arrived and it was good to have both on for the day. Mia arrived at 10:30 and Anna was cut from there.  Lunch was not terribly busy, we had 25 covers.  David did great on his first day of training, he trained with Chad who knew the drinks, and did well with that, it wasn't ideal to have him train in Cocina though, as Chad hadn't worked in the space yet. I had Eve stay a little longer to help with coffees and train for barista as well, she left around 1pm.  Mia had a few things to report in regard to frustrations, one being getting change, and how she doesn't understand why only the barista, bar or manager can only access it. I let her know that it is a security measure, and most places work the same way. She had a couple of micros complaints, which we're aware of.  The day ended well though, and we closed up Cocina in a timely manner.  One nicoise salad was returned, they did not like it ...

2/15 Condor/Snug

 Ended with 130 covers. Had 4 servers- Emma called out sick. We did not sit the 300's at all.  We had the demand, but service staff would not have been able to handle it. Bar was full all night in Condor.  Snug went well, very crowded again. Could have used three servers. We will run three servers and two bartenders moving forward with a floor manager on fri & sat & sundays (on holiday weekends).  Dave Franco had a nice dinner. Greeted them with a bottle of n/a wine from front desk stash.  Stevie Ellison was upset with their table placement, and I added a note to always have them reserved for 204 specifically.  Ali struggled a bit through her second seating- but she had a handful of difficult tables- 1 family with 2 kids who asked for a lot (the kids) and another table that I touched many times as they did not love the sour cocktail they got and then didn't love the jicama salad (but ate it all). Just a seating of needy tables. She handled it well....

2/14/26 Condor/Snug

 Busy Valentine's Day. Condor finished with 160 plus heavy bar tops. Lobby was busy from midafternoon on till about 9:00. Condor had heavy two top reservations, front loaded heavy. Kitchen buckled a little early on but reports on service was positive, as well as on the food/drink specials. Had a few callouts which required some last minute adjustments, mostly in Lobby. The Cocina well was activated with dedicated service well bartender handling all server tickets. Breaking was tricky with the volume in Snug right out the gate and only one server. (Corinn called out again.) After moving Lauren to Cocina service well, Snug picked up and had a long line of people, all seats and lounge areas were occupied so servers could not assist much. I hopped on bar to assist Collin and whittle down the queue in snug. Then  took over service well in Cocina to get breaks going. Alejandra arrived around 7:30 which helped but the brunt of the rush was mostly over at that point. Rerouted tickets ...

2/13/26 Snug & Condor

 146 Covers in Condor Steady night. All servers handled it very well. Great communication, great feedback.  One issue with an in house guest- he ordered a burger MW, it was raw in the middle. Emma handled it well, escalated it to me. I spoke with them to get a better understanding, that is when I saw the burger. They were lovely about it. They will be back tomorrow night with a 6 top. They must be indoors and we will comp a dessert. I took care of burger tonight. They are part of the thacher school (last name is kessler) so I know it is an important group within HER world.  Alfonso gives great service but his turn times are VERY slow. I will make sure to have eyes on him tomorrow and his section with how we forecast his reservations. It could create a bad bottleneck tomorrow, so for the time being we will be ahead of it. Tomorrow night we will plan to launch cocina service well. I think there is an immense issue with just how crowded snug gets, and theres too many employe...

2.12.26 Condor/Snug

 Condor: Started with 42, finished with 52 + barters,  three servers on the floor. Minimal walk ins. Cut Keegan at 8:00 she wasn't feeling well. Cut Joehana at 8:30. Service was smooth. Had some issue pulling up a house account for Jill, she had one round of drinks at the bar with the owner of Highly Likely. Spoke with her briefly she said to close it under her name, or Kristen's, however I could not find any house account for her name, nor Kristen when searching. Ended up using her comp button. She also wanted to send the Thatcher School table a dessert. Had to use her comp button for that as well. Smooth service and positive feedback on everything, with the exception of a Tuna Tostada that came back (too spicy). They've come back a couple times lately with same feedback. I tried one from tonight, had a little kick to it but nothing excessive. Removing or dialing it down would take away from the dish, in my opinion. 2.11.26 PM NOTES

 54 Covers Really not much to report. The GM from Radio Roma came in with a group of gals to celebrate a birthday so comped some drinks for them... a couple of server mistake comps but really not much Pretty much smooth sailing aside from when I walked out into the lobby at about 9pm only to see Collin SITTING and talking to patrons in the lobby. I just took a long pause and gave him a WTF look. He replied, "you want me to go stand behind the bar like a monkey?' One of the patrons apologized for getting him in trouble. I plan to give him a verbal warning at the end of the shift but his overall lack of professionalism and laissez-faire attitude really has no place here. He needs a formal, written warning. I think the time has come. Shape up or ship out! Speaking of tomorrow, can one of you do me a favor and return these voice mails? 2/10/26 Condor/Snug

Condor: Started with 37. Finished with 61 plus bar tops. Began raining pretty heavily around 6:30. Cut Angela a little after. 7:30. Service was smooth. Jaelen was on the line with Will and Octavio out. Tim Baltz (actor) came in for dinner, they were very nice and said they enjoyed everything. The weather didn't yield many walk ins. Claire got completely drenched bringing back the staff meal across the street. I let her go a little early so she could dry off and change. Satia phased out around 9:00. Alexandra closed. Snug: Pretty quiet. A few small parties, Had Collin help me with some prepping and batching, cut him at 7:00. Emma did well working lobby, expressed interest in possibly doing a shift a week out there. She was cut at 8:30, Erick finished out the night solo which was very manageable with the rain.

2/10/26 AM NOTES

 Euro breakfast was much more steadier than yesterday, nothing crazy. Rolo and Anna make a great team in the morning, as she will come out and assist in bussing, water refills, and pre bussing. This is exactly the thing we need, and I can slowly see that we're getting Team La Cocina on the same page with teamwork.  Ryan from IRD ended up helping remove cushions at the pool with housekeeping, the computer was covered (we still need to replace the printer), and Rolo moved all the teak wooden tables out of the pool area as well.  Anna was R&Ding some speciality cocktails. One was a raspberry matcha, and the other was a take on Cafe de Olla cappuccino with our pixie pigs & spices, I told her to show Riley tomorrow. I do think it might be fun to have a speciality coffee menu, with seasonal flavors, etc. similar to our speciality cocktail menus we do in Condor for different seasons, and holidays. 2/9/26 AM NOTES

 Euro breakfast was mellow, but not terribly slow, so the morning went by quickly. Rolo is training to open, he knows most of it, so he should be fine to be on his own with opening soon. Rolo is using my number at the moment to train on comps and voids, and training him on the difference between the two. He will need his number to be updated to void and comp in the future. I announced to the staff that Rolo is now lead server, and that management would be coming in later in the day, 8 for me, and 9 for Riley, weekends would be scheduled the same.  I let Eve know that Rolo would be opening Mon-Thurs, and that the shifts would be pushed back to 6:30, which we should be able to get opening done by 7 no problem, especially if we are following side work sheets, and protocol in that way. She seemed to have some concern with that timeline, and that she wouldn't be ready with cut citrus, etc. I let her know that side work is for the bartender, and if she has time, she can help, but no...

2.9.26 PM NOTES

 50 Covers Angela texted me midday to check in on reservations and volunteered off.  We split the restaurant evenly between Evan and Keegan.  Lauren pointed out that there was un unopened can of La Playa beer in side of a locker in the employee locker room. Concerning. Cut Chad just before 6. Brooke came in with her family, many of whom are staying at the hotel. I helped them with wine selections and Keegan did an excellent job with everything else. They seemed to have a great meal!  I was glad I caught Brooke on her own before she sat as I wasn't sure about the protocol for employee discounts with larger party checks (it was a party of 8). I also wasn't sure if she would want me to drop a check at all as she usually likes to put things on her account. She asked me to give her the usual 50% employee discount and to drop the check. 2/8/26 AM NOTES

 Very busy Euro Breakfast with 97% occupancy, we had 59 guests join us. The staff did great making sure everyone's needs were met, and Sundji is great at helping replenish the breakfast station. I had Alejandra check out her opening sidework before she got on the floor, so that we are implementing that on a daily basis. The server one opening sidework checks the Euro breakfast buffet, and coffee station and she made sure it was dialed in before starting tables.  Once breakfast was over I cut Alejandra, and asked Anna to stay, since we didn't have another server on to take the pool as well. Sydney was scheduled for the pool, but Anna preferred the pool, which worked out well, Sydney and Zammy took the floor.  Lauren bartended today, and was great, we kept Eve on for a little longer since Lauren did not know coffees well. 2/8/26 SNUG/CONDOR

 Insanely slow night. Superbowl.  Could have ran with 2 servers Corinn called out from snug- very fine running with 2 bartenders. Sent Erick home at 7:30, could have been earlier.  Very, very very slow night.  One comp- dry seabass per customer, brandon and I both had eyes on returned dish and it was fine. They were a NIN table- flagged for future reservations. Complained about music, volume, food. 

02/07 PM Condor/Snug

Condor: Started with 122, finished with 188 plus heavy bar-tops.  Very busy from 6-8pm. Kitchen/FOH bent but did not break. 12 top reservation associated with event ended up being 17. They wanted to pay item by item for 17 people, Riley spoke to them and said we could only do three cards. They ultimately put it all on one card. They stayed for about 2.5 hours which backed up the next seating a bit, but it all worked out they left for event. A kitchen printer went down briefly and one of Evan's tables had delayed entrees. Table-touched, comped an appetizer, they had a very nice time. Nathan Fielder came in for dinner, positive feedback from him as well.  Snug: Over $4200 in sales. Quite busy from the afternoon on. 2/7/26 AM NOTES

 Extremely busy Euro Breakfast, with a pretty big rush on the earlier side today, I would say around 8:15. Danny came in around 8:30, and then Naomi came in soon after, she was running about 10 minutes late, and then Sundji came in at 9, Danny said we might want someone on a little sooner, I think possibly the busser by 8:30 would be good.  After Euro breakfast typically when we have down time to get ahead for the day, we needed to start rotating breaks, as the whole team needed to break, which worked out fine. Anna was going to stay to help with the pool, which was great that she did, since we were really busy out there. The floor was so busy for the team, I could barely get a chance to help Anna at the pool, but she did fine, she had a couple of long ticket times for coffee drinks, and I believe it was because Eve struggled a bit to keep up with coffees and cocktails. Eve did decent for her first solo shift, and a busy one at that, but we did have some long drinks times. One...

2/6/26 AM NOTES

 Steady Euro breakfast, with 2 servers on it worked well. Sydney was cut once Mia arrived.  Sydney left possibly an hour after being cut, with sidework and breaks it took longer than it should, I'll need to cut and let staff know they should be finishing up with a half hour or so.  Mia and Zammy were the two on the floor, with Mia also checking in on the pool, so she had the back of Cocina as well. Mia wanted to take a quick 10 to get a bite to eat, it wasn't an ideal time, because we were starting to get tables, and the lunch rush was starting, but the way that Mia questions everything, it seemed easier to let her go. Zammy watched her tables while she was gone.  When Mia came back we had a handful of tables, and there was a little miscommunication and knowing where everyone was.  123 covers for Condor tonight Snug consistently busy  Snug micros went down at beginning of shift, Luc had difficulty getting in touch with Micros man. I will create an SOP on how to deal with tech crashes so we know how to expedite in these situations.  Evan made quite a few mistakes tonight. He had an equal section compared to everyone else, but he communicated all of the mistakes and all guests were happy.  Chits worked great tonight. Servers really starting to grasp them. It was rileys first night with them, and she really does well. She noticed that one table had a birthday and they ordered dessert and she did a candle and they were SO impressed and happy. Overall the system is strong. I do want to create a system to improve cups, i.e. Satia had two cups tonight on accident and there was a bit of a hiccup. 2.5.26 PM NOTES

 86 Covers  I tried getting a 4th server to come in as the books looked a little heavy for three, but the only options were Angela and Emma and neither were available. We definitely need to get another server hired up and trained up before Spring Break! There were some hiccups in the beginning of the evening with the band, the preset menu situation, and some surprise dietary restrictions and allergies, but we made it through. Satia had to leave abruptly around 7:30 as her sister went into labor, but Keegan and Alfonso were great about taking over her tables and things slowed down considerably. Did a lot of table touching and everyone I spoke with was having a good time and enjoying the food. Snug and Lobby were pretty mellow as was the event- not a big drinking crowd. When I went to do my drop at the end of the shift Jackie was in the Snug with a woman that was belligerent.  She was combative with Jackie and so I intervened and offered to walk her to her room. 2/3/26 Condor/Snug

Condor: Started with 13. 15+ cancellations. Satia called out sick. Ran with a split floor with Evan and Alexandra. Which was fine. It was very quiet. Went over new chit system at lineup, as well as proper response for a server if a party comes in while host is in the middle of seating a table. Amanda was a little cross with Angela last night after she took it upon herself to seat a party herself that was waiting at the host stand. Chad (bartender) came in with his mother for dinner. A couple other smaller parties, service was smooth, not too much else to speak of.  Snug: Quiet as well, but a steady flow of people lounging in the lobby. Had Collin help me with stocking, organizing, and liquor batching. He was surprisingly proactive. Cut him around 7:30, after which it was very quiet. Cut D'ete a little after 9:00. 2/3/26 AM NOTES

 Euro Breakfast guests came in spurts, a little rush at 8, and then again after 9. We had a handful of guests ordering off menu too. We're working on ways to sale items to guests just there for Euro breakfast to increase sales, green juice, orange juice, speciality coffees. We have been out of orange juice for the last few days. Danny came in on Saturday and didn't care for his juice, we tried it Sunday as well, still not great. So the last couple of days we're trying it before a whole pitcher is made, and it's been bitter and sour. I talked to Sean he said it's the same oranges they've been getting the whole time. Yesterday we juiced tangerine juice, and that was great, and we had enough left today to serve two servings, and we 86'd after that. Hopefully, we can get back on track with good oranges soon.  Eve and Rolo took breaks so they could attend the meeting. The meeting went well, only the staff that were working attended, so I hope all the other staff ...

2.2.26 PM NOTES

 33 Covers Reviewed chit system at line up and everyone seems to be on board and doing well with it. Will work on training Alana and Joehana on the system this week as well as any other servers that missed implementing over the weekend. Riley volunteered to be off which was nice as we started the evening with only 9 covers.  Jerry came in for his first server training shift and shadowed Keegan. He said he was excited and felt like he already learned a lot. Cut Chad at 6pm, Corrin around 8 (I tried to cut her loose at 7 but she asked me if she could stick around to see if it picked up), and Angela was out of here by 7:30. I also cut Trent by 7pm as Corrine E was here as runner and was happy to take care of any IRD tickets.  Jeremy and Eric came in and sat on table 303. They were entertaining some friends, Keegan waited on them, and they seemed to be having a good time. D. Crockett dined on table 24 and Dana Rebmann (Conde Nast) returned for another dinner on table 21....

2/2/26 AM NOTES

 Not too busy today. Euro Breakfast was a little steady at times, but nothing crazy. I have the team working on getting the guests name and room number upon arrival, so we can cross it off the HERO, and I can check in with any VIP's etc. Rolo feels pretty comfortable with it, so it should be fine. We also had a couple of reservations this morning, as well as a couple of walk-ins that were local, I was able to put their information in the system.  I had Rolo stick around until 1, not too much was happening at that point, he went home, and Maureen took over. It was pretty quiet for the day, she did great solo, and although Jean knew to assist her, she didn't need too much help.  We got a table at 2:40, they ordered quickly, and we were able to close up soon after that.  I spoke to Jean and Rolo about one of them coming Tuesday, and the other coming on Wednesday to the meeting, and it seemed to work well, I spoke to Sarah and she said she would be here for both meetings...

2/1/26 AM NOTES

 Anna called out late last night, and I didn't see the text until this morning. So we had Alejandra coming in at 8:30, and it was fine until that point, I tried to get Zammy to come in early, but he wasn't able to, but although Alejandra was busy, she did a great job. She need a bit of assistance, but that was to be expected, and the morning felt smooth.  We moved into the lunch shift and it stayed steady. Zammy had a party of 11 at 11:30, they took most of his section, so Alejandra had most of the other tables of walk-ins in her section, and Sydney was at the pool. Alejandra had to leave by 12:45 or so for another commitment, she was scheduled until 12, so she stayed a little longer to help us out. So Sydney took over her section, as well as take the pool, in this process table 35 was overlooked, which is one of our regulars, she is so nice, but still quite a bummer that they were overlooked. They had water filled, most likely from Sundji, so it was hard to tell that they had...

 Slower night  Chit system still going well, please keep reminding servers to take their chits out of their cups  Dana Redmann travel mag critic had a nice dinner. Table touched throughout each course and they were happy. full comp.  Alfonso cut early, keegan finished her tables and then ally was out by 9:45pm, last table got dessert and hung out bit.  New tip sheets all updated as masters. Each day has an IRD tip sheet.  Amanda continuing to do really well with new recognition sop at front door. All walk ins are being put in, and recognition of guest, using their name, is going well.
