1/31/26 Condor/Snug

 Condor: Started with 130, finished with 166 + bar tops. Worked on new approach with Resy, Chits, and an emphasis on punctual table turns. Quiet for the first hour but picked up quickly at 6:00. Kitchen got a little backed up around 7:00 but adjusted quickly. Service was generally smooth. 86'ed Potato Tacos, Soft Serve Machine went down for a bit, as well as the ticket printer on expo. It appears to be overheating. Spoke with Octavio about maybe relocating it somewhere cooler. Higher than usual DNL returns tonight. Crudo (too fishy) the chicken, vampire, tostadas. Everything looked good going out, and all other feedback was all positive. Emma was overwhelmed a few times tonight, I helped her on a few tables all went well. 1/31/26 AM NOTES

 Eve came in at 7:30 with Anna, since her car broke down. We would have been okay with just one of them, but after how busy it was yesterday, I wanted to be cautious. Anna was also feeling under the weather, and told me when she arrived, I let her know we would let her go as soon as we could, which would most likely be when Alejandra arrived at 9 am. Because we didn't have Sundji this morning, I waited a bit to see how European breakfast would be, but we didn't get too busy, and I was able to let Anna go.  Anna has come in, or complained about being under the weather the last two shifts she's been scheduled, and has gone home early. I do appreciate that she has come in though, so we're not without a barista. She does have a pretty consistent issue with leaving early, or being sick, or having some sort of emergency.  After, European breakfast, we went down to Zammy, Syd, and Alejandra, Zammy was at the pool because it was such a nice day, and we had a 84% occupency. 1/30/26 AM NOTES

 Mia called out sick last night, and I reached out to Sydney to come in at 8 instead of 7, so that she could close with Zammy, and I pushed Zammy's time back as well so that he could close for the day.  All was going well, but around 9 am, Sydney got really busy, we had a 11 top, and a 6 top both hotels guests, but the 11 top ordered food, and didn't do much of the European breakfast, so it put Sydney behind a bit. She had taken the same group yesterday for a private event, so she had a good rapport with them, but once again put her behind a bit. We also had a decent amount of tables that were not guests at the hotel coming for breakfast, I think because some restaurants were closed nearby for the ICE strike.  Zammy arrived, and helped to get us caught up, and we tried to put Sydney on break, but she had a few tables going, and then soon after Kiersten came with a group of 8 for lunch. 1/29/26 AM NOTES

 Euro Breakfast was a little steady, a handful of guests were ordering off menu.  Anna went home a little early, feeling under the weather again. Rolo got a little busy, so she left around 9:30.  Marlowe was scheduled at 9, but came in at 9:27, I'll need to talk to Riley about her schedule, and if that is okay. I know when she first started she said the 9 o'clock start time was difficult with dropping off her child, and 9:15 would work better. She did arrive at 9:27, and after working on pre-shift in the office, when I came back to Cocina she told me her daughter's school called, and she needed to pick up her daughter for being sick. I told her okay, it should be fine, but we need to pay her two hours, even if she leaves early, and if she could finish up some sidework and be close to two hours. Then I realized since she was going home on her own request, and not being sent home, that the two hours wasn't an issue. She said since she was going to go pick up her sick chil...

1.29.26 PM NOTES

 49 Covers Satia volunteered off and I cut Keegan around 7pm. We will be good to cut down to three servers and one busser on Thursdays as it has been a consistently slow night. No food, kitchen, or service complaints. Very little to void and comp- mostly just duplicate tickets.  Had some trouble trying to split a guest check between three hotel rooms but luckily Jackie was able to take care of it on the back end. Snug was consistently busy but not too much that D'ete wasn't able to handle it on her own.  Not much more to report! 

1/28/26 AM NOTES

 Mildy busy Euro breakfast. Daniel came by to get his matcha, and nobody was in La Cocina, Rolo walked away for a moment, as well as myself, and there was nobody in La Cocina. Daniel said, we should never leave it unattended, so Rolo and  I discussed checking in with each other before we leave the space. We were probably gone for less than a minute, but completely understand making sure someone is there to greet and welcome guests.  Daniel also mentioned getting guests room numbers upon arrival, which we implemented before, but found it to be repetitive, or confusing to the guest when they went to pay, as they already gave their room number, but we will ask room numbers upon arrival again, and they can of course give their number again when they are paying their room charge.  Once the morning was over, we broke Rolo, called off Marlowe, the 9 am shift during the week doesn't seem to be needed, but Riley and I can discuss that, and see what we should do moving forward...

1.28.26 PM NOTES

 61 Covers I had to comp a Sea Bass that was sent back because it was dry, a steak because it was tough, and a cucumber salad that a patron simply did not like.  There was some confusion with Will regarding the Dinner and a Movie. He was off put by servers allowing people to order the appetizer special and entree special separately. To my knowledge that has always been fine in the past. Will check in with Octavio about it. Alfonso, Angela, and Ali are all unable to make it to the meeting tomorrow regarding tips due to other jobs. The Lobby/ Snug was super busy but everyone seemed happy and bussers from both events as well as from Condor made passes to collect glassware.  I spoke with Jerry about coming in to do a trining shift on Monday. He is keen to do so. Satia asked me if I thought I would need her tomorrow to which I said I did not. We have 20 something on the books so going with 3 servers will be more than enough. 

1.27.26 Condor/Snug

Condor: 23 on the books. Quiet opening. Cut Evan quickly and split floor with Emma/Angela. Had a little bit of a push before closing when the Mariposa event got out which helped the night a lot. Fairly quiet besides that. Lobby: Quiet. A few lounging parties late in the afternoon and a couple hotel guests working on laptops. Not much else. Event: Smooth, was well received. Very little on cash bar sales however.  Fixes: Condor Bar: There is a leak under the 3 compartment sink. Cocina: Leak coming somewhere under the espresso machine drain tray. Possibly from the drain tubing underneath.  Prefunction Bar: The Micros POS cash drawer would not open for me, and there is no key. And it would not let me reassign the drawer.  On top of that it was throwing an error message every time we try to run a card. Saying network connection error before you could even get to the card reader. Essentially rendering it useless. Fortunately the event is not going hitting the bar very hard, Cha...

1.27.26 COCINA

 32 Covers with a couple of people at the pool and a bunch of coffee orders throughout the afternoon... I sent Rollo and Eve home around noon, right before we got VERY busy LOL. Maureen did a great job. She was sweet with guests and stayed calm during the big rush. Jean needed constant instruction in how to help on the floor. I had to ask him to water tables and to run food and drinks. He takes zero initiative. Very frustrating.  Eve told me that they suspect someone working on the overnight crew may be using the juicer as she and Brandyn found it this morning filled with pulp and put away dirty...

1.26.26 PM NOTES

 47 Covers. Very quiet night in both Condor and Snug Bar/ Lobby There were some complaints during line up regarding the steamer in the employee room is not working. There was a general consensus that the servers are unable / unwilling to iron their shirts at home...  Chad let me know that there was only 1 bottle of Fortaleza Repo left. I told him I would check in with Luc but that I assumed more was on the way. Can we add training to Jerry's schedule for next week? Monday and/or Tuesday.  I'm thinking we may want to make sure front desk is not making any more reservations for Valentine's Day until after 8:15 PM. It's starting to look a little stacked and all at once. Killian disappeared from the floor for a long time. Felt like it was 15-20+ minutes but might not have been quite that long. He finally reappeared saying he'd been having stomach issues. I asked that he check in before leaving the floor for longer than 5 minutes in the future. He was very apologetic.  R...

1/26/26 AM NOTES

Very slow day at European and regular lunch service.  Rolo and Eve left at 11, after pre-shift.  I had Maureen do some deep cleaning, and organizing.  Satia batched some margaritas, and did some deep cleaning as well.  We had 14 covers for lunch, Maureen took them all, they came in little by little.  Our last table came in at 2:40, just for an iced tea.  Our last table left at 3:40, Satia went home right at 3, and Maureen finished up her last table, and did her paperwork. I cleaned her table, so she could get off the floor.  No major issues or mistakes today. Maureen is such a nice addition to the team, she's always keeping busy, cleaning or organizing, and checking in with her guests, and going over and beyond with doggie treats, or water for their dogs. She takes coaching well, which is not needed too often, but today I showed her how to course, and timing for guests at lunch. 

1/25/26 Condor and Snug

 Very Slow night in both outlets No comps Really nothing to report other than a guest tried to use a $100 Visa Vanilla gift card. Their bill was $98 and it would not let us close it, the card kept being declined. I was able to charge for $50 then $30. After doing some research, companies like that will only allow restaurants to charge the amount minus 20% for tip. however, Angela had the same giftcard lastnight and it was for a $200 check and the $100 fully was taken off and successfully processed. So just FYI, if we deal with that in the future.  Keegan also had a lady try to write a check- reminder that we do not accept checks.  Note for schedule- february 8th (superbowl) we will only have 2 servers, no lobby server. It was slow tonight due to football. 

1/25/26 AM NOTES

 Very busy European Breakfast, a large part from Warner's friend's birthday. We kept the Euro breakfast out until 10:25, due to late comers.  Eve cut at 10, which was not through me, but she told me Satia was good to take over. Cutting like that is not ideal, and I will let Eve know tomorrow, that I would like to know what they are thinking about before making the decision on their own, which is unacceptable. It worked out fine, but Satia did not take a break, any typically Eve will break her, but Anna broke her instead.  I cut Anna and Alejandra after pre-shift, so we were down to Satia, Zammy, and Sydney by 11. Plus Sundji and Naomi on the floor. I kept Sundji and Naomi on until their scheduled time, and broke Sundji prior. I could have cut them, but it allowed me to work on sidework sheets. 1/24/26 Condor/Snug

 Condor: Started with 120. Finished with 146 + heavy bartops all night. Two large parties (10 & 14.) Both went smoothly. Had a couple of seating hiccups involving reservations increasing their party size on the spot, and one self-seater at peek rush. All went well though and we found solutions. Amanda did great as usual. Alfonso buckled a little bit during the push, helped him with a couple of things in the moment and he recovered quickly. Quite busy, but smooth sailing. Potato Gratin was 86'ed for pretty much the entire evening.  About five minutes before 10:00 Grayson called for help on bar with a drunk patron. He wanted another drink, Grayson cut him off, he then said his wallet was missing and could not pay for his bill. I asked if he some form of identification he could leave, he said he had none and then became combative, insinuating we took his wallet. I politely asked him to leave the bar but I'd be happy to discuss further outside. He refused to and got in my face...

1/24/26 AM NOTES

 Steady European Breakfast, they trickled in all day, instead of one big rush, which is nice because we could stay on top of keeping the buffet looking nice and full.  A lot of VIP's came to Euro breakfast.  Anna and Eve left soon after pre-shift and Euro breakfast.  Lunch took awhile to warm up, but we were steady for most of the day after a lull between 11-12. During that lull we were able to give Sundji and Zammy a break. Sydney took a 10 as well.  Brandon sat down with the tennis instructor for the 50th bday party, and service was slow for a second, because Sydney went across the street to take her 10. Sundji and Erick should have started them, but did not, and Brandon came in to ask for a server. So not ideal at all. I got their order in quickly, and they were fine from there. Zammy took over their table when he got back from break which was just a few minutes after I put in their items.  Speaking of breaks, the team struggled with the idea of walking ...

1/23/26 AM NOTES

Not terribly busy for European Breakfast, we cut Anna as soon as Mia came on the floor.  Mia took the back station with the pool, and Zammy was the front.  Lunch wasn't terribly busy either about 25 covers, I tried to cut Zammy early, but it was steady enough at least to keep him for support for MIa.  There was a tasting in Condor for lunch, so Chef Brandon wanted to make sure we focused on running our food. I hate to say that Mia had one table in the window for too long, and she blamed it on IRD, who had already gone home for the day. Really the whole team should have been more on top of it, but all staff should know and be more present to on running food. Mia definitely has some things to work on and be improved. I try to coach her as much as possible, but I feel like it goes in one ear and out the other. We definitely need to stay on top of some of her habits.  Zammy left at 2:30, and Mia and Erick closed up soon after 3. 

1.22.26 PM NOTES

 46 Covers Emma volunteered off and D'ete called out sick. It was a pretty slow in both outlets all night, but there was a bit of a pop in the lobby in the beginning. We had both Grayson and Collin at the bar so all was well. The tasting for Alli and Daniela's wedding buyout went really well. They absolutely LOVED the food and Alfonso did an amazing job with them. I spoke with Jerry about training to serve and he is really happy to get started with training ASAP. He said he is available Mondays and Tuesdays. I said we'd start getting him ready so that when the busy season starts he has a place. I know he'll be great on the floor.  I closed out the check from Alli and Daniela's tasting to Kirsten as that is what she said to do. She said she would deal with it on the back end with Brooke. When Alfonso was doing his checkout we realized that he hadn't rang in the wine or cocktails to their check so I opened a check under my own number and rang in all of the items. ...

1.21.26 PM NOTES

 75 Covers Cocina was not properly shut down. Jean Zarate left the bar a mess- the three compartment sick was not drained, the ice wasn't entirely burned, and not all of the were bottles covered. He did not clean under mats on the bar. The espresso machine was not flushed, the wand was left with crusted milk, and there was espresso debris all over. We talked about giving him a formal UKG warning at his next shift. Also, if syrups are low bartenders should be batching them.  The 14 top for OBE went well. Keegan did a great job from beginning to end. I was glad she was able to come in. Even though we didn't have high covers, it would have been too much for any of the other servers to take on in addition to their section. Service would have suffered. Not great for the tip pool, but definitely better for guest experience.  Snug was pretty slow all night. Claire came in to do her checkout before I had officially cut her (it was 8:50). 01/20/26 Condor/Snug

Condor: Started with 23. finished with 40 + bar tops.  A 7 Top for Serge Becker the owner of Radio Roma turned into a 10, as Eric Goode and friends joined. Had Satia take the large party. Had a little pop in the beginning with moderately heavy check-ins tonight, Predominantly from 5-7. Pretty quiet after 7:30. Began making cuts a little before 8:00. Service was smooth. The camera crew doing food and drink photography came in as well. Food items were to be comped, and drinks on them. It was after 8:00, the cutoff for closing to house/room accounts, so they are still open. DNL Return on Pastor Ribs saying they were too dry.   All house account/room charge checks after 8:00 have been transferred to myself, because of the Oracle update. They are on a clipboard in the office with sticky notes for context to be reconciled tomorrow. Server/Bartender reports were all ran as usual, with the exception of EOD Z report as I cannot run one with open checks. Snug: Very quiet. A few parties ...

1/20/26 AM NOTES

 It was a very quiet day, not too many guests at the Euro breakfast even.  We did a lot of deep cleaning, Eve deep cleaned the espresso machine, and did some other cleaning and stocking. Rolo cleaned the server station outside, and organized it. He labeled one of the brooms for La Cocina, and put the other ones in a better spot. Maureen wiped down the front of the bar that was getting pretty dusty, and refilled the salt & peppers, and all the sugar caddies. Jean did some stocking that was needed behind the bar, as well as a little bit of cleaning, he also helped get the bar set up for the small event that was in Cocina tonight.  I cut Eve and Rolo as soon as Jean and Maureen arrived, I left them both on, although we probably could have gone down to just Jean, but we wouldn't have gotten as much cleaning and organizing done, which was needed after a long and busy weekend.  It was nice to have Maureen on to check in with pool guests, as well as take the small rush ...

1/19/26 AM NOTES

 Very busy European Breakfast, with occupancy at 96%, there wasn't a big rush all at once, but consistent all morning, we had a bit of a late rush at 10 as well, and we took down the breakfast at 10:20. We ran out of a few items towards the end, quiche (did not cook correctly), meats, and cheese, it didn't make sense to make another plate 7 minutes before 10.  We were scheduled for a typical Monday, not a holiday Monday, so I did ask Maureen and Satia to come in at 9. They were both able to make it happen. It would have been good to have one more server, and a busser for the day to stay ahead of things, and give the pool 100% focus, although the pool died down after 1 pm. and with a lot of guests that had checked out for the day.  I asked Ryan in IRD to keep an eye on us though, and offer assistance if necessary, especially for bussing, and to please keep the coffee station full for us during European Breakfast as well. 1.19.26 PM NOTES

 56 Covers It was a mellow night after an extremely busy holiday weekend. I sent Riley home a little after 6pm, cut Chad from the Sung around 7pm, and Corrin was gone by 9pm as were all of the servers in Condor save Angela. Not much to report in terms of service aside from table 26. They sent back a bottle of Ollos Branco. They thought it was corked (it wasn't). Satia got them a bottle of Paco y Lola Albarino to replace and they were happy with it. Later on, when Angela had taken over the table, I approached to check on how their meal was going and one of the women said that she had just pulled a paper clip out of her mouth that she was about to swallow. She showed me the paper clip- definitely one of ours. I took care of her ribs as well as the bottle of Paco y Lola as she was very upset. They seemed ok on their way out. Keegan and Sundji are set to come in at 5 pm for the party in Cocina tomorrow. 

1/18/26 AM NOTES

 Really busy day. European breakfast with 85 guests in house was really busy, Paco mistakenly thought he was scheduled at 10:30, so he didn't make it until 9. Anna was solo until that point, it was just me and her on the floor, and she did well, but it was difficult to clean and reset tables. I asked Brandon to please help us with bussing, he of course did, but was a bit frustrated. I let him know that the busser would be there in 15 minutes, and he said that is not soon enough. I also let him know if Paco showed up in time, we would have been in a better situation. Danny also came in from breakfast, and he asked if we just finished up a big rush, which we had, and were behind, but we were getting back on track.  Once Sydney and Zammy arrived we cut Anna, did some breaks, and had a pre-shift that was a little longer and thorough. 1/17/26 AM NOTES

 Occupancy was high for the hotel, so European Breakfast was busy, it started at 7:30 and continued all the way until 10. Since it was paced consistently through the morning, we had a good rhythm, and kept up well with replenishing the breakfast, and making sure we had tables clean and ready to go for guests. Zammy ran a bit late, but Anna was good on her own until he arrived. Anna was cut soon after the rest of the team arrived at 10:30, and after pre-shift.  Paco was at the pool for the day, and not on the floor, with the occupancy I left a pool server on, and he had a good flow of guests for most of the day. He got the busiest at 3:30 though, and it was a bit stressful, because the floor got a little busy at the time as well.  The kitchen got a bit annoyed that I didn't communicate open menus at that rush, and we're surprised they got so many tickets after 3 pm. Brandon approached me about it, and I let him know I would communicate it better next time, it just got busy...

1/16/26 AM NOTES

Decently busy European Breakfast  Rebecca went home soon after the 10:30 arrived, which was Mia and Paco. Paco was going to take the back Cocina station, and the pool, Mia was going to take the front. Mia asked if she could go home early if possible, and Satia was willing to take tables and tend bar. It was 11:45, and although it seemed slow at the time, I said we would have to wait until at least 12:30, because our lunch rush hadn't even begun. She was fine with that, but was really pushing to leave. We had a few reservations, and I said for that reason alone we had to wait.  We ended up getting busy, nothing too crazy, but Paco had a handful at the pool, and he can't always handle both the floor and the pool, so Mia ended up taking most of the tables on the floor. They both ended up staying, and left around 3:30. I'm glad I kept Mia on.  Rebecca mentioned that she wasn't on the schedule next week, and asked if she did anything wrong. 1/18 PM CONDOR/SNUG

 Snug Net: $3,873.50 Condor Net: $10,752.00 Snug Covers: 123 Condor Covers: 140 Comps: Pear Salad- pears very hard. Guests were nice about it. Did make a comment about their coursing, bartenders sent it all at once, and they were hoping to have entree items coursed out a bit better.  Service: -Service had a few hairy moments- Alfonso reluctant to take a table when Keegan had 4 new tables. Could not handle a 5th, Alfonso did not help out. Once the table turned, new seating was given to Alfonso. I did not ask if he could take it, I had to give him clear direction.  -Lobby was full and steady all night. Bussing was falling through certain points. 1/17/26 Condor/Snug

 Condor: Very busy Saturday Night. Started with 134, finished with 175. Stacked heavy on the front end with multiple large reservations from 5-7. Table service was exceptionally smooth. Emma got a thousand dollar tip. Positive feedback all around. A woman went out of her way to speak to a manager, raved about Alfonso, also saying food was fantastic, she said she had "not one criticism." Kitchen did not bottleneck, good ticket times from the line as well as from bar. Amanda and Sarah orchestrated seating very well, and servers did great turning. A hefty queue of polishing and sidewalk tonight, as to be expected. Satia and Alfonso knocked out a lot of it.  Claire expressed interest in serving at the pool more when season picks up. She's done a fair amount of covering out there and likes it. She also asked about barista shifts. Snug: Very busy in lobby, especially from 4-7pm. Margie and Lauren both in Snug did fantastic, and would be a great duo for Saturday nights in genera...

1.16.26 PM NOTES

 112 Covers We started the night with 3 Duck, 1 torta, and no french fries. We also had to 86 Hanger Steak mid shift. All pretty weird for a Friday night. Had a potato taco plate sent back as the woman didn't like the way it looked- She thought it was a ridiculously small portion (even with the two tacos) for what the price was. Hard agree. Holding the corner of the lobby for a potential party of 15-20 on a Friday night was a bad look. People were upset by it and ultimately no one showed. Kinda made us look like idiots. I talked to Evan about needing to Iron his shirt. He said he would. Everyone could tighten it up a bit in terms of uniforms. Need to talk to Grayson about cutting himself. It's not the first time he has done so, this time saying that his shift was "over at 8." The staff doesn't understand that just because your out time says 8 on 7Shifts, it doesn't mean your shift is over.  Had to comp an entire check for Collin from Snug. It was a walk out ch...

1/14/26 Condor/Snug

Started with 30, finished with 30. A couple walk-in’s to bar top. Only a few dinner and a movie customers. Harriet Hudson (Kirsten’s party) had a great time, comped a splash of Pehu and dessert. Service was smooth all around.  Some issues with Micros tonight. Lobby Hallway termial went down, and then the one by service entrance in Condor. Both were reset and seem to be working.    There are two Kampachi Ceviche’s in the Condor Apps SLU., thus two buttons, which complicates putting in counts/86’s.  One should be deactivated assuming it does not affect the button for Cocina.  Will look at it on the back end on EMC.   The spring in the swinging door from kitchen to hallway is broken. It doesn’t close itself and just kind of does what it wants. Chase and maintenance are on it.    Snug: A few small parties having drinks early on. Pretty quiet after 7:00, cut Grayson at that point.  Condor: Started with 10, finished with 29 plus bar tops. PPX Jessica Ritz dined-in with guest, had a good time. Closed to PM House Account 9514. Kate from HR also dined in for the first time, she had a great time as well. Very quiet otherwise. Alexandra did well on her own tonight. Heavy cuts between 7-8pm. Lauren being the last out by 9:20. Communicated with staff on slow season cleaning and side projects. Had Evan wipe down all the POS terminals. Will lean on bartenders to deep clean fridges and ice wells this week.  Snug: Quiet as well. A few small parties camped out in lobby. Not enough to keep full staff on. Cut Chad around 7:00. D'ete a bit after 8:00. Erick closed solo without issue. All staff good tonight on communication and checking in with MOD before leaving. That being said both Lauren and Evan forgot to clock out tonight, note to remind staff to remember clocking out as soon as checkout is finished. 1/13/26 AM NOTES

 Very low occupancy for the hotel today, so European Breakfast was slow with only 11 guests. I cut Eve at 10, since Mia could do coffee's at 10:30 if needed. Rolo can do coffee too if needed. I cut Rolo at 10:30 or so, once Mia arrived.  I put Eve on a project to match the coffee tops, and bottoms together. We have two cup sizes, and two top sizes. 1/12/26 AM NOTES

 Steady for European Breakfast, it was a good flow, Rolo and Eve took good care of our guests. The women from the Sunkin retreat came in early, and at separate times, with separate checks, so it was a little stressful with that for a moment, but not a big deal.  We had Rolo on solo until 12, waiting on Alejandra to arrive, and then we got busy enough from there to keep him on, until 2:30, unfortunately he had a break penalty. Warner came in for a meeting with Danny, and had lunch on the patio, so one more reason to keep Rolo on a little longer. We filled up outside and we kept busy until we closed at 3. Alejandra forgot chicken on a salad, but the guest was nice, and we got it out as soon as possible. We removed the charge for the chicken, and I offered dessert or coffee on us, but she was fine.  We didn't have any guests at the pool yesterday, besides one couple who was staying with us, they had to come in Cocina to ask for service, which I apologized for.  Quiet night again in both outlets.  Grayson expressed interest in being involved in the bar training program set up. I told him to talk with Luc, as I love his enthusiasm in wanting to help the team strengthen and grow. He expressed concern around consistency.  I cut Grayson and Killian (killian wanted to go home first) at 7pm.  Corinn wasn't feeling well, so she left at 6ish. Collin continues to be a problem, talking with front desk, hanging in IRD and standing talking with Marc in the lobby. I asked him these three different times what he was doing, he always has an answer- and quite frankly its disrespectful. Especially when I saw him in IRD eating staff meal at 6:30. I asked him if he was on break, and he said no, I came back for wine glasses, and I saw the tots, so now I'm eating them. He said this to me in front of many employees.  Quiet night in Condor & Snug Ended with 61 covers Cut Erick around 7pm. Jean broke before he left.  Corinn cut at 7:30 Ally is on her second to last training shift. Tomorrow is her last training shift. Gave her a micro section in emmas section. She handled all tables well, really liked this "test run" where she was able to be alone to answer questions. No complaints from her table, all were happy. Feedback from the team is all positive, all staff members like her. She is a great addition to the team.  A couple staff members (Keegan and Erick) are dealing with family members who are very ill/on hospice.  Busy morning. The dining room filled up around 8:45-9, and continued until a little after 10. Tables filled up outside as well, the servers had sections, so everyone was well taken care of. We had a reservation come in this morning, who said every thing was wonderful.  Satia had her first bartending shift, and did well. She asked about going break at 9:45, when we were in the middle of a busy European breakfast, so it was a little annoying, but I let her know we usually break that shift after European breakfast around 10 or 10:30. She broke at 10. I do find that she needs to be directed, and doesn't go out of her way to stay busy, but that is something we can work on.  After breakfast we definitely slowed down, and we didn't have any coversr to start.  151 Covers Busy night. A lot of large parties. Things were smooth in terms of the kitchen- nothing dragged and pp seemed happy. Did have a blue fin tuna tostada sent back, but that is not uncommon... There was some tension between Angela and Alfonso. I cut Angela and told her to give her last table away. She tried to give it to Alfonso as he was the other server on the patio and was not busy, but he said no. She came to me upset. I found Alfonso polishing and told him to take Angela's table, which he did. There was tension also between Emma and Alfonso. One of Alfonso's regulars, Ann Oppenheimer, was seated in Emma's section. Alfonso came to me at the end of the night and said that when he went over to say goodbye they told him they'd had horrible service from Emma. I plan to give them a courtesy call or email to check in, especially as they are such big regulars. 1/10/26 AM NOTES

 Busy European breakfast, but the pacing was good, they trickled in all morning. Zammy was scheduled at 8:30, but overslept and arrived around 9:40. Anna and Eve handled it though, and it worked out.  Paco and Sydney arrived at 10:30, we cut Anna right away, and held on to Zammy for a bit. Zammy had the front section and Sydney in the back, so she could take the preset party of 9. We ended up cutting Zammy around 12:15, since there wasn't much going on in the lobby or the pool. Paco came into the front station for Zammy, and still took laps to the pool, just in case.  The party around a little after 1, they were inside, and then we moved them outside, no biggie, it just stalled starters, and the only tables available were in Paco's station, but we wanted to have Sydney continue to take them. 01/09/26 Condor/Snug

Condor: Started with 62, finished with 86. Quiet offseason Friday. It was also very cold out. New taco plating went well. Service was smooth. Sent Keegan home a little early, she was dealing with an allergic reaction. Swordfish Dip: Getting frequent DNL returns. The complaint is that it's too cold. They're prepped to be held at room temperature and then torched before serving, but if the initial batch runs out and it's busy they will start pulling from the fridge, which is not room temp. I'm assuming that is the issue. Staff was briefed on not drinking bottled soft drinks. Snug: Steady throughout the night. A few standing parties at its fullest. Did not get overwhelmed though. Margie closed. All went well. The Noche Buena cocktail from the holidays was a big hit.  Steady European Breakfast, the guests mostly came in after 9, and nobody was in here at 10. Paco and Rebecca did a fine job keeping up, Paco helped on any speciality coffee's. I cut them both once Mia and Sydney arrived at 10:30, but I let them know they would need to stay until we went over our new menu items. They stayed until 11-11:30. We had our usual lull between 10-11:30, which gave us a good amount of time to go over new menu items, and look through the matrix.  It was noticed that there were no dressings listed on the menus, I will go over that with Vanessa, Chef Octavio said that they should be on there. We'll also need new menus for the pool. We also decided to leave lunch menus off the tables, preset. They are too large, and just look clunky on the tables. We're seating guests with menus as they sit. Condor: Started with 18, but had a few walk-ins and a soft push around 6:30. Emma trained Ali on the floor, and did a very good job and should be considered for future server onboarding. Evan and Alfonso finished by about 8:30. Sent Jerry and Amanda home around 8:15. Service was smooth.  Claire frequently leaves without checking in with MOD. She needs to be checked off on IRD breakdown/cleaning, closing report and sidework as she often does not properly finish things.  Rory has been very chatty with staff again. Talking with D'ete in the kitchen at length when he's needed at dish pit and D'ete is needed in lobby. I had to politely break them up twice.  Snug: A few small parties camped out in lobby throughout the night. Grayson left around 8:00 with Collin closing. A large crowd from across the street came in with Jeremy about ten minutes before lobby closing. Started with 35 in Condor. Finished with 43. Split floor with Evan and Keegan. Smooth service. Very quiet, and not much foot traffic on the street with the Arcade closed off for filming. Sent Margie home at 6:45. Cut Joanna at host stand at 8:15. The 11 top reservation went very well, and stayed until about 10:00.   Eduardo did not show up today, but it was fine with one busser. He seems to be in Mexico for the next two weeks.  Snug: Very quiet. Jeremy's friend played piano off and on for a while. Which is tricky adjusting the house music around it. D'ete went home around 9:00. Erick closed up. Piano's being relocated tomorrow. Not much else to report.

1/6/26 AM NOTES

 Very slow European Breakfast, with only 5 guests. Rolo took care of them.  Eve text me at 5:55 this morning to say she was running late, I don't hear from here, nor did she arrive by 7:30, so l reached out to her to ask if she was planning on coming or not, because at that point Rolo was going to be in by 8, and we didn't have many guests at that point, and only 14 guests at the hotel staying with us anyway. She suggested since she couldn't seem to wake up, and since it was slow, she was fine to let Rolo take the floor. I talked to Riley about it, and plan on putting the info into UKG, but in a way she was really a no show. Eve has a problem with attendance, and I don't think she realizes it, but it has been well documented in UKG.  Marlowe arrived at 9:15, later than her 9 am arrival time, but she said dropping off her child took longer than expected.  We had a decent European Breakfast, which guests come in steadily all morning, no real rushes. We were about to take down breakfast a few minutes after 10, but three more guests came in, so we kept it up a bit longer.  Sydney and Rolo were scheduled at 7:30, and 8, but only 1 was really needed. It's been really busy the last couple of Mondays, so I think it was just in case we had another busy Monday.  Sydney was able to finish her sexual harassment course, so at least that is finished.  I cut Sydney as soon as Zammy got here at 10:30, and Rolo by 12, and Zammy left between 12:30-1. I had Zammy cleaning and organizing the pool. We needed to throw out quite a few cocktail menus, I will let Vanessa know we'll need more that are laminated.  Luis took a look at the printer outside at the pool and said it was definitely dead, and due to water from the rain, the circuit died. We will need to remember to cover and keep menus out of the elements when we expect rain. Wh...

 Pretty quiet night.  Sarah and I organized the office. Hoping we can keep this up and organized, as there was a LOT of old useless items. Folders on wall are labeled with everyones names. I would like to stop using post its for notes, and instead leave messages for appropriate parties in their wall folder.  No issues, other than some late parties close to 9. Wanting to work on verbiage with staff around last call, etc.  Alli trained tonight with Satia and Keegan. She is doing well, and she is fitting in really nicely with the team.  Alfonso asked me about his friend from OVI and if he could have him come in tonight to meet me. I told him we aren't hiring right now, and to please just give me his resume to have on deck when we do need to hire.  Anna called out sick at 2 am in the morning. I got the message once I settled in at La Cocina around 7 am. I asked Paco to come in early if possible, he came just a few minutes past 8, and was solo on the floor. Sundji and Naomi were able to support him with filling waters, and pre-bussing, so it was fine. Luckily we weren't too busy, and most guests had European Breakfast, and not too many other order besides juice, and coffee.  I cut Paco once Sydney and Zammy arrived at 10:30, and he left soon after pre-shift.  We're having an issue with one of the printers out by the pool, and Paco reminded me about it, without the pool being closed the last few days, it kept slipping my mind. I think possibly we might need a new one, as I'm afraid it may have water damage, but Luis with maintenance said he will take a look at it when it's not raining. We've been good about covering the computer system over there when it rains, but we miss it by a bit, and cover it once it'...

1/3/26 AM NOTES

 Decently busy European Breakfast. The staff only accounted for 20 European breakfasts, which means more people were ordering food then normal, the kitchen has been keeping up really well with demand. We did have two orders of uni and eggs that the kitchen said we were out of, but Octavio found the uni, which worked out, but the process of finding out, and delivering to the guest is stalled. I will check in with the kitchen sooner in the day, before service to make sure we have everything in stock, and to have them double check.  It showed we had 37 covers on resy for breakfast, and 47 for lunch, I feel like a few may have been missed, for breakfast, so it was a steady great day.  Sundji went home at 1:40, as I didn't want him to go over his 5th hour before going on break, and needing to be back at 4:30. He could have left at 2, which would have been preferred with how busy it was, but I discovered as we were talking about not going over his 5th, that he arrived at 8:40, ...

 136 Covers Busy night. Full bar.  Party in Cocina went well.  Octavio wants action/council of some kind to be taken regarding Angela. She refuses to run food and is constantly "spreading rumors."  He said that she recently refused him to his face when asked to run food. He is over it. I have definitely noticed her poising the well, so to speak, with the younger staff. Octavio also complained that Alfonso refuses to run food unless it's his own.  Something I have tried to stress to servers since starting here is that running food should take top priority. No matter what you are doing in the kitchen, when you hear "runner" or "hands" stop, drop, and run that food! In addition the idea of teamwork needs to be paramount. I find it strange that pp seem to struggle with stepping into each other's stations to bus plates, get drinks started, etc. Emma is frustrated by repeatedly getting low tips on large parties. She is asking if we can put a 20% gratuity...

01/02/26 Condor/Snug

116 on the books. Front-loaded with many large reservations from 5-8:00. Busy in both Condor and lobby.  Eric Goode’s party went very smootly, despite time crunch (they were attending the 7:30 movie accross the street) pushed apps and expedited all the entrees. They made it on time without issue.   Atropioa party also went well, they loved everything, expedited their service due to time crunch as well. A few came back after movie for lobby drinks. We reserved the wall couch for them, met with piano player in Snug Bar, told him whatever he needs to let me know. Turned down the Sonos a bit. They had a good time. The lobby completely filled up after 10:00, it got very busy and didn’t clear out until after midnight. Chad sold nearly  1K from 10:15-11AM.  I stayed until about 1AM clearing and resetting snug and lobby.    Two guests staying in room 26, sat at 304. Angela was their server, while training Alexandra.
